Last night as we were falling asleep Meeker turned to me and said: Do you want to come to the gym with me early tomorrow morning so I can run you through a workout? Uh…heck yes. I love having a personal trainer husband.
So this morning, I started off with some water and a snack before we hit the gym.

Usually this is my favorite snack on earth, but I just wasn’t feeling it this morning. I ate the dried apples, and left the walnuts. At the gym, Meeker put me through a fun strength workout which involved me balancing on a lot of exercise and bosu balls. I looked like a bowl of jello for most of the hour as I tried to maintain my balance. I’m just glad it was early morning and there weren’t many people around to stare at me. I left with a tired body – which is the point, I suppose.
I came home and was craving one thing – a smoothie. However, we had not one piece of fruit in the house, so I improvised.

Carrot, blueberry POM, and ginger slushie.
I’ll be the first to admit that this was weird. I blended one carrot, about a ¼ inch of grated ginger, and ¼ cup POM juice, then poured it into my slushie maker. It was alright…not great, but alright. After this I went to the grocery store to remedy the no fruit situation.
Lunch
looked like this:

Last night’s leftovers + cherries

These cherries were so good…I had a few more handfuls throughout the afternoon.
Dinner looked like this:

Grilled green beans and corn + chicken meatballs
I made a soy sauce glaze to put on the meatballs and green beans by pouring soy sauce + mustard into the empty meatball pan and simmering it for a few minutes. It was a little salty for my liking, but it deglazed the pan nicely – which meant less pan-scrubbing after dinner.
Corn was 5 ears/$1 at the grocery store this week, so prepare to see a lot of this…

I just throw it on a hot grill…no oil, no salt, just corn. Mmm, lick.
And with that, I’m off to enjoy some dessert. Happy Tuesday, all.

That corn on the cob looks so good. We have only had a few good ears so far this year. We grilled it but we NEVER end up grilling it long enough to get the char. We are so impatient!
Ahh, fresh sweet corn. It is like a vegetable candy!
The So Delicious coconut milk is the best vegan ice cream–love it!
everyone needs a personal trainer for a husband dont u think!! lucky lady
ummm WOW, lunch LOOKS FABULOUS!!! lol
I hate the days when there is no fruit in the house. I actually had to go to the store this afternoon to pick some more up too.
mmm coconut milk ice cream is by far the best thing that ever happened to me!!!
Yum! I hate when things get too salty but that glaze looks delicious!
we had corn tonight too! SOOO GOOD! ive never had GRILLED green beans! perfect!
Hood, you have no idea how badly I want to come live with you so I can eat your food.
Yes, now it’s confirmed. I need a BBQ and I need corn on the cob – yours looks so good!
Yum, i love leftovers, never been one for coconut though!
I love that you are making slushies now with your machine
I would love a ice machine or better yet…fro yo maker!! haha.
Chocolate Coconut? Are you serious?!
Has to be the best combo ever…wish I could have a bite
Hmmm, I’ve never had corn on the grill but I need to try it before the end of the summer!!
Lucky to have a personal trainer husband!! Sounds like you got a good workout. I love cherries in the summer!
Corn on the grill is my kinda thing. I love the little black marks it gets…mmmmm.
Sounds like an intense workout!! And you’ve inspired me to do some strength training this morning.
Really you can let Meeker train you? Keith and I tried that but it didn’t work at all! Everytime he corrected me or my form I got super defensive and we ended up fighting. We have tried it several times and each time it never works. I guess the problem is that I have a hard time separating Keith doing his job and Keith critizing me. I hear it as him critizing me personally, when in reality I know he isn’t. But even though I try time and time again to remind myself that I ALWAYS get mad. Now if I even ask Keith for a tip or anything he instantly refuses!
Haha, that’s too funny Kelly! I’m like that with almost everything except exercise. Maybe it’s because I know that he DEFINITELY knows more than I do about the subject.
I want to buy a grill JUST so I can have grilled corn.
Grilled corn is one of the best summer treats!!!
Sounds like a great workout!!
where can i find myself a personal training husband? i mean, does meeker have friends? brothers? uncles? i’m willing to be flexible
love the idea of carrot slushie – sorry it didn’t work out. i hate when i have an ingenius idea i hope is going to be amazing, and its not. ahhh c’est la vie. tis’ is life.
i want to grill vegetables now.
thanks,
holly

I don’t think I could let my partner train me, workouts for me are sweaty messes!
Lol.
The corn looks delicious
Hehe, you’re nothing if not innovative! I’m so digging”naked” corn right now too – I swear, it doesn’t need anything added!
Oh that slushy looks good and the corn and asparagus -yum!
My hubs does Insanity and kettlebell workouts with me with him planning them (although he isn’t a personal trainer) but I Love workin out with him PERSONALLY we feel closer ( after 14 yrs of marriage) that we share that in common and it sooo helps me to have a wkout buddy that encourages me and high fives after a great sweat session
and when I am down about results etc he is a great encourager but also isn’t afraid to push me harder when I want to stop or give up
Interesting slushie! I made a slushie-type thing yesterday, too.
Is that coconut milk ice cream good? I tried some from Coconut Bliss recently and absolutely LOVED it. I wonder who they compare.
That is my favorite dessert EVER! But I usually can’t find it, so I’m glad there are a whole lotta other desserts out there…
I love grilled corn with Old Bay!!
Tanks for your comment! I haven’t tried Old Bay…so thanks for the suggestion!
