Mmm, I just made the yummiest pancake for breakfast.
Ingredients
- ¼ cup almond flour
- ¼ cup smashed banana (about ½ a small banana)
- ¼ cup canned pumpkin
- 1 tbs. Sweetener (I used NuNaturals Stevia Baking Blend)
Combine all the ingredients and cook on a griddle or hot pan for about 3 minutes per side. Then I topped mine with the rest of the banana (sliced) and a mixture of agave/peanut butter. It was faaaaantastic.
I’ve got a busy day ahead of me: clean my house, go to school (eek!) to help with registration today, come home to host Bible study at 3:30, and the dinner at the in-laws. I hope to squeeze a workout and a doggie walk in there somewhere. Then, tomorrow morning Meeker and I are leaving on a road trip to see my grandma in Texas. A whirlwind weekend is on the horizon…


That sounds awesome! I wonder if it would also work with coconut flour for a coconutty flavor?

No, I refuse to believe these are better than pumpkin oatmeal pancakes! Maybe……bananas make most things better…..but no I can’t believe it. Haha

That looks delicious! I make the same thing but sub egg whites for the almond flour. But maybe you could even use both?!

Thanks for your comment! The texture of the pancakes was very moist…it didn’t cook up like “cake” – it was a bit more mushy – but the edges were nice and crispy.
