Rice is Cheap

Whew, it’s been a long few days. The beginning of the school year is always a bit hectic, but I can say that I am excited about the kiddos’ first day of school on Monday! I just have to do a few more hours of planning/prep tomorrow and we’ll be all set. It’s hard to believe another school year is on the horizon.

And I still haven’t been grocery shopping which means I’ve been eating a lot of rice. A lot. Here is one of my favorite creations…

Sauteed cabbage (from my bro’s garden!), frozen carrots, brown rice, sunflower seeds, and teriyaki soy vay

‘Twas delicious. And I bet you a million dollars I’ll eat it again this week. I have a whole head of cabbage, a bag of frozen carrots, and about 2 cups or rice left. When those things are gone, a grocery trip will be unavoidable.

Alrighty, I’m off to sit on the couch and relaaaax. I hope you all are having great weekends, talk to you type at you tomorrow!

  1. That looks really good! I’ve been thinking of making a ton of brown rice and reheating it through the week, since we have so much. And you’re right: It’s cheap!

  2. I love brown rice for its simplicity and convenience. It works so well with all kinds of dishes. I practically lived off of it last semester in college. ;)

    I can’t believe school is already starting up for you! Summer flew right by, but it’s always fun starting a whole new year. And I’ll bet the first day with the kids is fun. :D

  3. I just made a ton of brown rice for several meals :) . First one was rice and pb ;) . The next will be in my homemade eggplant “burger” with carmelized onions, next beans and rice, and then who knows?! :) I LOVE the versatility,cheapness,and gluten free-ness of rice :)
