I’ve got my lunch packed up…

Today went so well! My kiddos are incredibly sweet, and I can’t wait to get to know them better. We’re off to a great start in the 3rd grade world.

I started off with some strength training and a new (to me) breakfast…

Sweet omelet!

I filled it with frozen fruit (that I had thawed in the microwave), then slathered sunbutter on top. It kept me full all the way until lunch time (5 hours!). I was very wary of this combo, but was pleasantly surprised. It tasted like a crepe.

Lunch


veggies (edamame, carrots, corn) + rice, power bar, a mini green machine smoothie

It was also very yummy, and perfectly filling.

I know powerbars get kind of a bad rap – but I actually really enjoy the taste!

It’s kind of like a thin, sticky brownie.

Snack

I have this theory that peanut M&Ms are perfect food. They’ve got antioxidants (chocolate), protein and healthy fat (peanuts), and just enough sugar to get you through the afternoon. See? Health food.

Dinner

Sorry, I’ve eaten a version of this for 3 nights in a row. It’s just so cheap and delicious!

½ cup brown rice, 2 cups sautéed cabbage, sunflower seeds, an egg, and asian bbq sauce…


Mmm, I don’t know if I’ll ever get sick of brown rice and vegetables. The varieties are endless! Plus, having cooked brown rice on hand is pretty much the best thing ever. I have another four cups on the stove as I type this.

In the 3rd grade world…

I thought I would show my newer readers a picture of where all the action happens.


Now you can picture all of the shenanigans, and me eating lunch at the little desk in the corner. Get ready for another full year of fun!

    So glad you had a great first day back at school!! Can you believe our kids don’t come back until the 23rd?! We’re going back later than most of the other counties in our state. It’s so weird!!

  2. peanut m&ms are a total health food in my book! That omelet looks so interesting, I would have never thought of a combo like that! I could see how it would be delicious though!

    You know what’s currently going through my head over and over now? “I’ve got my lunch packed up, my shoes tied tight, I hope I don’t get in a fight! Oooh back to school, back to school” haha.

  4. So glad you had a great first day! Your classroom is so cute! I am starting at a new district this year, so we start new staff orientation next week, but I just found out that we don’t get kids until September 1! I can’t believe it!

    I’ll have to remember the health benefits of m&ms the next time I have some. It will be fun sharing my knowledge with whoever says I’m eating junk! Haha!

  6. I’ve never heard of a sweet omelet before! Though one’s I tried egg with honey & butter on toast -yuck, don’t do it! …..hope you have a great first day!

  7. I’m pretty wary of the sweet omlette, too. Next time I’ve eggs in the house I’ll try it though. I thunk I’ve seen enough people eat them now that it can’t be that strange of a combination. :)

  8. Its so nice to see you actually using the goodies. San J is $$$ but man is it good and easy on the tummy vs Soy/MSG. I make a crepe and fill it with crunch peanut butter! We are so going to miss u!! I did not get u on FB?? Take care, Tona

  9. Good luck with the new school year! I cannot believe it’s all starting up again. Our schools don’t go back until the 23rd. Where did Summer go? I’m glad you posted the picture of your room. I’m sure you’re an awesome teacher!

  12. Love your peanut M&M theory. I have the same theory about dark chocolate reeses ;) Seeing your third grade classroom got me so excited. Im new to the blog world and an aspiring elementary school teacher (2nd or 3rd grade ideally) and its great to see other women enjoying their career and having such wonderful learning environments for their students. yay! <333 can't wait to read more of your blog!
