Balance

I wasn’t hungry for breakfast this morning, so guess what? I didn’t eat it. I just had coffee for breakfast. Even though there are 1000 people out there telling you to eat breakfast if you want to stay thin – you have to do what works for you. This morning, coffee worked for me. Usually I eat (and love) breakfast, but this morning I didn’t. Balance. (and I didn’t gain a single pound)

When lunched rolled around, I wasn’t any hungrier than normal – but I made a mixing-bowl-sized salad anyway. I prefer my veggies in mass quantities.

Romain lettuce (almost a whole head), red bell pepper, cucumber, green beans (canned), carrots, almonds, corn, avocado, flax seed, hummus + water dressing, and nutritional yeast.

Just to give you a little perspective, that’s a regular sized fork perched on the edge of my biggest mixing bowl. After the intake of all this roughage, I needed a few bites of this.

Salad, then ice cream. Balance.

All that fiber kept me FULL for the day. Dinner was light.

Spring rolls!

I soaked 4 pieces of rice paper, and then filled them with carrots, zucchini, bean sprouts, and avocado. Then I dipped them in Soy Vay Teriyaki.

And for dessert…

A little square of dark chocolate with crunchy pb. The perfect balance of sweet and salty.

I’ve got some relaxing to do before school tomorrow…enjoy your evenings!

    Where did you get that ice cream…I’ve been wanting some cookie dough…but I can’t have regular ice cream…I can have the kind make from coconut milk tho! ;D I actually prefer it!

      I don’t eat dairy either, so this is perfect! I definitely don’t like it as much as the “real thing” – but my tummy prefers it for sure. I actually just finished off the container.

      I found it at King Soopers, next to the Ben and Jerry’s section. I think it was around $4.

    with the rice paper: what kind do you buy? how do you soak them? im intimidated by it!

    It’s lovely to be able to eat intuitively, to just eat what your body tells you to. And your eats seem wonderful, even if you ‘broke’ the “MUST HAVE BREAKFAST” rule :) You really showed balance and yumminess at the same time…that coconut milk ice cream being the clincher!

    I opt out of breakfast often on the weekends, I just don’t feel as hungry sometimes. It’s all good!

    Coffee for breakfast is perfectly acceptable especially when you consume that much salad :)
    I usually don’t have much more than that on the weekends before noon. It’s just what works for me.

    great post! it is so true that its ok to not alwaaays eat breakfast- food rules are pretty silly- sometimes you have to just listen to your body. That lunch sounds awesome! love the salad :) i’m sure the ice cream is delicious too! never had that brand.

  20. im with ya on the balance!!! so what if one day you skip breakfast…I promise NOTHING is going to happen to you! :) people have to find what works for them and thats that! :) oh and i love your “almost whole head of romaine” I do that every time!!
