Rainbow Salad

Hello friends! I’ve had a busy, but good day. A long run, errands, lunch with in-laws, church, and then home for my veggie-fill.

To make this rainbow salad you need:

  • ½ head purple cabbage, sliced
  • 2 carrots, cut into strips
  • 2 zucchini, cut into strips
  • ½ cup chopped onion
  • ¼ cup water
  • Avocado
  • 2 tbs. spicy mustard
  • 1 tsp. garlic powder
  • Salt/pepper

Put all the veggies + water + salt/pepper into a BIG hot skillet. Cook on high until vegetables are just tender and onion is translucent. Then add the mustard and garlic powder. Then transfer to a bowl and garnish with the avocado.

Seriously, try this! It’s so easy and extremely tasty hot OR cold. I smell leftovers tomorrow…
