Food is my love language

Ahhh. My class was rowdy and chatty today, and it feels nice to be sitting in a quite house right now.

I couldn’t sleep last night AT ALL. I woke up every hour and finally decided at 4am that it was worthless to be lying in bed. (Surprisingly, I wasn’t tired today, and I’m excited to sleep like a baby tonight.) So at 4am, I started off with level 3 of the 30 day shred, and then a green monster.

The Standard: 1 cup frozen spinach, ½ frozen banana, ½ cup frozen blueberries, ½ cup fresh raspberries, 1 scoop protein powder, ½ cup almond milk, 2 cups water. Keeps me full alllllll morning.

Oh yeah, and last night Meeker asked me (while I was making a mondo batch of chili – more on that later) if I would make him some cookies. Let me tell you – that boy NEVER asks for sweets, and I love baking. So I jumped at the chance to break out the butter and sugar. I left the last batch on the counter to cool, and when I woke up this morning…there were 4 left. I love him – eating cookies late into the night.

At lunctime, I had some chili over a sweet potato. It was a delightful combination.

And this to drink…loved it.

Oh yeah, and these at snacktime.

After school and a staff meeting, I came home to make some cornbread to go along with that big batch of chili I made yesterday.

Boxed mix. I’m a cheater.

After these muffins came out of the oven, I packaged them up and took them (along with the chili) over to the family of a former student who is going through a rough time right now. Food is my love language.

I made a double batch last night – half for us, half for the family. There was bison, green peppers, onions, all kinds of beans, tomatoes…the usual.

And then came home to make dinner for US tonight!

Sweet Potato Fritters

Served with kale chips. (Kale drizzled with evoo, sprinkled with salt/garlic powder and baked for 15 minutes at 425*)

In the 3rd grade world…

We celebrated our first birthday of the year today.


These cookies are the most popular food in elementary school since pb&j sandwiches. I see more of these “birthday cookies” than cupcakes. Personally, I think they’re unpleasant – and that’s coming from a major cookie lover. Mine went in the trash can after school.

Thoughts on these cookies? Love or hate? I know Meeker LOVES them (as do 99% of the 8 year olds I know).

  1. my mom is OBSESSED with these cookies! i personally prefer a homemade treat or fresh bakery item. i’m also much more of a chocolate person. however i can see how many americans get addicted to these babies – they have sugar+fat which can trick the brain ;)

    Chili, cookies, fritters, great comfort foods going on your household! It means fall is around the corner, love it!

  3. I had peanut + diary allergies in my class last year, so we actually had a variety of treats, but not those! I hate when a parent buys a cupcake cake at kroger and then leaves it for me to pass out. I’m wiping neon icing off me ALL day. It’s like super glue that stuff.

  4. I’ve never liked those cookies, even when I was in the third grade. They don’t taste like anything in particular but sugar. Not much flavor…I’d much rather have ANY other kind of cookie. I much prefer homemade. Then again, I’m a bit of a cookie snob. :)

  5. I can’t stand those cookies! They do absolutely nothing for me lol. The cookies you made, on the other hand, look amazing. Makes me want to bake a batch right now. And I would except it must be 90 degrees already inside! :/

    • No shame at all! I love kroger brand sheet cake…so I’m not much of a snob when it comes to sweets. It just so happens that those cookies don’t strike my fancy.

  6. Oh my gosh. Chili on a sweet potato as apposed to a plain potato? Why didn’t I think about that?!? So excited to try it!! And I’m with you on those cookies. Not a fan… but for the record, my hubby loves them too. Ha, ha.

  7. I used to love those cookies! Talk about a sugar overload……..

    I woke up pretty early on Monday morning too, except I just laid in bed like a lazy bum. :) It always amazes me that I am not falling alseep at my desk all day when that happens, you know? But it makes for a restful night the next night.

    I now have a plan for my sweet potato- thank you ma’am. :)

  8. When I was little I <3d those cookies with a must-grab-handfuls-of-these-bad-boys passion. Now I'm gluten-free and avoid cookies in general, but I've since learned that there are better flavors than sugar with more sugar topped with sugar ;D Like coconut and almond, ugh yum.

  9. I LOVE those cookies. We used to eat them at chorale practice in high school (until I was 18…no shame), and called them “fluffy cookies.” Brings back such good memories, even if they are laden with more chemicals than Drano.

  10. HAHA! That is JUST like Mike! I brought him over a baggie of four cookies (your CC recipe actually!) and he ate them all in one sitting. He’s like “Oh, was I supposed to ration?” BOYS. And also, he loves those frosted cookies too. Is it just me or do they make you feel REALLY sick after a bite or two? I think it’s just too much sugar…

    As for the Kombucha! You reminded me! I tried my first one on Saturday and I could barely take it! I think it was the fizz with the random strings of culture floating around… I just couldn’t get my head around it. Maybe I’ll try that kind you had up there and see if it’s any better.

    And finally – so sorry about the sleepless night! I HATE those. It’s the most frustrating thing, but your solution was pretty much the same solution I always come to – get up, work out, eat breakfast and be excited for the coming night’s sleep!

  12. I actually think those cookies look sort of amazing, but they always have trans fat so I’ve never gotten to try one.

    Major props for being a good neighbor, that’s awesome that you helped out an old student!

  13. caught up on six posts, yes six. it’s not you…it’s me, promise. anyways, i love those mini french toast dippers you made! and i am still in shock that bread gives you an upset stomach. if that happened to me, i think i would seriously die. anyways, glad you are feeling on top of teaching. lots of love to you girl!!!

  15. What are those cookies?? I watched a really interesting documentary (The Killer At Large) and one section talked about vending machines in schools. The vending company made a really crazy claim about how students would go to extremes for pink cookies… I really hope those aren’t the same thing.
