Sand Cereal

This morning I woke up with a hankering for more of those raw snickerdoodle cookies, so after my workout – I broke out the blender again. But this time, instead of shaping them into balls, I just poured the mixture into a bowl.

I had planned to just spoon the yummy, sand-like treat into my mouth, but when I passed the fridge on the way to the kitchen table, I thought…almond milk! So I poured it on, and the sand cereal was born. It was everything I wanted it to be and more.

When I got home from school, I was famished (like I am every.single.day.) so I noshed on some carrots/celery/hummus while standing in the kitchen. I can’t ever muster up the energy for a photo at that point because my hunger is unbelievable when I walk in the door. I might as well eat dinner right then. But I didn’t…I snacked, mowed the lawn, worked in the garden, did some school work and then finally had some din-din.

1 egg + 2 egg whites, broccoli, spinach, salsa (on the bottom), salt, garlic powder

I just sautéed the veggies, then poured the eggs on top. After the mix had set, I threw it in the oven at 425* for about 5 minutes – give or take. Just about the easiest dinner I know. Aside from a bowl of sand cereal…

In the 3rd grade world…

I loved your “bathroom accident stories” so much from yesterday’s post! I wanted to travel back in time and hug the little yous! Take solace in the fact that you aren’t alone…I also had a peeing accident when I was in first grade. Sitting in my chair. In the front row. It remains the most embarrassing moment of my life.

    My first and only pee-pants story was in 1st grade also. I was standing in line to ask if I could go and just burst because the line was so long. It got on the teacher’s books and everything. Everyone in my class saw and I continued to go to school with those kids for the next 12 years. Haha, it was always everyone’s favorite story.

    Your food always looks soooo amazing. We started back to school on August 5th so I have several letters already, but I got a really cute one today. I was out of the room for a meeting so the typical sub madness went on. I had warned the students that I expected them to get a compliment and earn the f, to spell fish tank and get new class pets. Well needless to say they did not and I got this letter,
    Dear Ms.M,
    We did not get the f. I am sooooooooooooo sorry. I still love you very much! I hope you are not mad!

      Thank you so much for your comment!! That is the *sweetest* story!! During my first year of teaching…I cried in front of my class because I couldn’t handle them, and I got ALL SORTS of notes like that…

    I had a pee story with my students today. We had a fire drill, and upon arriving back to the classroom, we had only a few minutes left for our music lesson. As I was dismissing the kids to line up (3rd grade) one little girl asked me how she was going to get up because she had to pee and couldn’t move! poor thing! I told her to get up carefully and go to the bathroom! Luckily, I think she made it!
