Not Overly Impressed

Thursday, Thursday, Thursday! And on the brink of a 3-day weekend…the anticipation is so sweeeet. So was my breakfast.

The end of a coconut yogurt container with stuff mixed in.

The stuff: ½ banana, crumbled raw carrot cake, crunchy flax cereal, cashew butter

It was sweet, but not exactly what I wanted. I’m not overly impressed with the coconut yogurt – it’s a little watery for my taste. Live and learn.

Lunch was pretty standard:

Sweet tater with hummus


Veggie bowl with hummus + water for dressing (I just keep the hummus tub in the fridge at work – that’s the reason it’s usually incorporated into every aspect of my meal)

With the classroom backdrop.

Meeker was home before 8:30pm for the first time in weeks! We usually don’t eat dinner together (there’s no way I can eat that late…8:30 might as well be bedtime). So we had fun tonight making pizzas together.

I made his crust using the easiestpizzadoughrecipeintheworld, but had this little guy from the freezer to appease my weakling of a stomach…

Potatoes, zucchini, red onion, tomato sauce, nutritional yeast

The toppings were great, but the crust was okay, not stellar. More like a floppy tortilla. For the second time today, I wasn’t overly impressed.

However dessert was impressively simple. I can’t remember where I saw this (if it was you, speak up!!).

I wrapped a couple of dates in peanut butter and plastic wrap and stashed them in the freezer while I did the dishes (about 10 – 15 minutes). Then got a little cold-peanut-butter-wearing-date-nugget.

Such a good little dessert!

In the 3rd grade world…

These were given to me by a co-worker who knows I am cold 99.999% of my life (Thanks Julie!). I kick my shoes off and wear these anytime I’m sitting at my desk – usually when my kids are at specials.


But today was freezing, and I was shuffling around my classroom in these stylish slippers (the kids LOVE them), when an adult walked in. It was embarrassing. I’m sure she wasn’t overly impressed with my professional attire.

  1. HAHA love the slippers, I would totally do the same. Comfort over fashion always in my book!
    Pizza crust for me has to be doughy and thick, that’s why I always make my own, never let down then.
    I’ve seen that peanut butter/date concoction to somewhere. I read so many blogs with so many great ideas I can’t remember where I saw what!

  2. I tried coconut yogurt recently – I am with you – not so great – I feel the same way about coconut water. However coconut ice cream = new place in my heart (and hopefully not my hips- ha!)

  3. Professional Smessional… I am just incredibly envious of the fact that it was COLD there… My dad said he slept with the windows open last night and his house went down to 59 today! Can i come sit in on your class this year instead of finishing out my senior year? I feel like i would laugh a lot more and possibly even learn more from you than some of my silly professors ;)

  4. Don’t let a grumpy adult stop you from wearing those fun slippers! :) I have a friend who is a teacher, and her thing is that she always wears fun socks. The kids love them. And isn’t that all that counts? :)

  5. I have found that my anticipation of coconut milk went the same way as your yogurt…it was fine for overnight oats, but alone…not so much.

    I am also always freezing in my classroom. Yesterday I had a sweater on and another draped over me like a blanket as I worked with a small group. I am considering bringing blankets. :)

  6. Whoops! The slippers are cute though and I’m sure if you had an extra pair to offer the adult it might have been a good joke instead of just a bit embarrassing.

    My husband has been late for dinner the past couple weeks too. I just tell him that I’m eating at 7 whether he’s home or not. It’s usually “not”. But that means I don’t have to prepare a whole meal so it’s a lot easier on me. :)

    Sorry the products weren’t overly impressing. I hate when that happens.

  8. I’m sorry you were disappointed twice! I hate that – eating is such a momentous joy for me I hate to waste it on food I’m not overly keen on!

  9. That peanut butter date/freezer idea is pure genius!

    I love the slippers, and who cares what adults think? You can always just say “I do it for the kids”. Thats my mom’s excuse for all her ugly Christmas sweaters, and earrings. And the Halloween sweaters. I think she secretly LOVES them.

  11. I always eat with out my BF haha…he gets home late then does thinngs when he gets home and usually ends up throwing together a sandwich quickly!

  13. katie dear…just caught up on 4 posts! i am sorry your kids called you ms. trunchbull, but let’s be real, we all know ms. trunchbull gets it done, ya heard? anyways, i love your creative and unique concoctions. i need to start being more adventurous like you by blending sweet potato with almond milk, and making hummus dressing, and sandwiches out of bananas. i love it all.

  14. listen being warm is about being warm, keeping your little tootsies warm doesn’t make you unprofessional. just spontaneous, and catch people off guard. I think it’s awesome, I’m always cold too, trying to find some warm shoes for when I’m at work.

  15. Oh my gosh the frozen peanut butter + dates is INGENIOUS! I definitely have to do that! And don’t be embarrassed of your slippers! I would’ve thought you were the coolest girl ever if I saw you wearing them :)

  16. Haha, I keep a pair of fuzzy slippers in my closet at school too and wear them every chance I get. I try not to wear them when the students are in the room b/c our principal is big on professionalism, but sometimes when my feet hurt at the end of the day I have to pull them out!! They are monkey slippers and the kids looooove them! ;)

  17. Love the slippers!! I’m a fifth grade teacher and keep a pair of crocs under my desk at all times–whenever my feet just can’t take it any more I slip them on. But maybe I should break down and just bring my slipper! :)
