So I just realized that while I ate 3 apples today (that should keep the doctor away), I also ate white rice at all 3 meals. Sometimes I’m craving brown rice, today I wanted the white. That’s just the way things go.
I could think of nothing but rice during my morning workout…so I came home and made some at 6am.

White rice, black beans, salsa, 2 eggs
For lunch, I added some of my breakfast rice/beans to my leftover squash soup.

My morning snack and afternoon snack were both gala apples.

only one of them got to wear the sweater…
When I got home, I could literally only think of one thing I wanted…white rice.

So I made a stir-fry with red cabbage, eggplant, zucchini, and tofu – all of which were just an accompaniment for the sticky white stuff that I couldn’t get off my brain.
In the 3rd grade world…
A fellow teacher brought me a BAG of apples from the tree in her yard.

I had to eat one on the way home from school – it was so crunchy and sour, I loved every bite. (Thanks Mandy!) I can’t wait to use them for fun baking things.

Um, can we count eating rice 3x in one day as “intuitive eating?” Because I am so down with that.

Mmmmm i’d smear peanut butter all over them and be happy!
Apple butter is always fun. Peel core and slice them, pop them into a pot or slow cooker, add honey, brown sugar and spices (nutmeg, lots of clove and cinnamon) and let it cook away!

You’re right…you can’t really go wrong with sour apples and peanut butter! I’ve never thought to throw them in the crock pot, either – thanks for the great ideas!

No specific apple recipe and I know oatmeal doesn’t really do it for you, but… I added fresh chopped apples to my oats when they were cooking the other morning, adding in some pumpkin pie spice and topped with almond butter. It was heaven!
Nothing wrong with 2 apples a day – OR 3 bowls of white rice. It’s all about balance, right?

I was going to have that same thing for breakfast today!! But I chickened out and went with the usual granola, toast and smoothie. And if the apples were really sour and crunchy, I’d want to eat them as is! Can’t wait to see what you make though!
I have leftover white rice now and now I know what I’m eating for breakfast. The egg + salsa combo looks delicious!

You are so welcome Katie! I am glad you are getting use out of them. This is actually the first year out of three in our house that I picked them. I usually just let them all fall and rot on the ground until I pick them up and throw them away.
