There were only a couple of good things I ate today – I really need to get back on my lunch-packing game. I’m only going to share the yummies with you; the pathetic lunches will no longer be documented until I can put my creativity pants back on. Hopefully it’s soon…
The best snack…
1 tablespoon of Tofutti cream cheese + 2 tablespoons of salsa
Looks a little like ick, but tastes like delicious.
Celery and wheat thins for dipping – heck yeah. I had this snack twice today.
Then for dinner, I finally cooked something. Poor Meeker has gone weeks without a proper home-cooked meal. So have I, for that matter.
His 2/3 and my 1/3 white bean pasta bake:
- 1/3 cup cooked whole wheat pasta shells
- 2 cans white beans, rinsed and drained
- 1/3 cup chopped onion
- 2 minced garlic cloves
- 1 can (8 oz) tomato sauce
- Italian seasoning
- Cheese (or on my side, Daiya)
Sauté the onions and garlic in the oil until translucent. Then add the beans, tomato sauce, pasta, seasoning and salt/pepper to taste. Next, pour everything into a baking dish, top with cheese of choice, and bake/broil until cheese is melty. (I baked mine @ 350* for about 10 minutes, then broiled for about 5)
And there you have the best of my day – what was the best thing you ate today?? I could really use some ideas…I’m in a rut.

I don’t think I knew (or cared) what a germ (or girm) was when I was 8 years old. (I ate lunch straight off the trampoline and drank from the garden hose.) Obviously some kids still don’t care (ahem..Josilin, you’re going to be okay, even though your desk is probably disgusting)
