When I saw these potatoes on Holly’s blog a few weeks ago, I knew I had to make them. I scribbled the recipe down on a sticky note and stuck it in my kitchen, and tonight was the night.
Vegan mashed potatoes + steamed spinach
To make the mashed potatoes, I tweaked Holly’s recipe a bit. I boiled a pound of red potatoes, then added ¼ cup toffuti cream cheese, 1 tbs. earth balance butter, salt, 1 grated clove of garlic, then topped them with sliced leeks. They were almost too creamy – if there is such a thing. Garlicy, creamy, and oh so satisfying.

I walked into a conversation that a few of my students were having today during carpool and almost gagged. What were they talking about, you ask? Well, the only 2 sentences I heard were:
My dad’s poop is SO big.
Oh, so is mine!!
Uh, what?! Thanks a bunch kiddos – next time I see your dads, I am quite sure I won’t be able to erase that image. I warned you it was gross .


I feel like all I ever type on here is “lol” regarding the 3rd grade stories… but again, I am definitely loling at that one.
Lol!!! Kids are shameless, I think it’s hilarious sometimes the conversations I hear my nephews speaking about! Things that would normally make anyone gag…

i also love the plethora of apples on your blog lately. they make me happy. i wish i could send you minnesota haralson apples – they are the crispiest, juiciest and most yummiest apples on the face of this earth. in fact, i am eating one right now
