I haven’t cooked dinner for myself or Meeker in weeks. Maybe even a month. But that all changed today. I had a hankering for something comforting – so I browsed soup recipes, but then beef stroganoff popped into my head, and I decided to make turkey stroganoff because I like turkey more than I like beef.
First, I browned a pound of ground turkey meat and set it aside.

Then, in the same pan – with some olive oil – I cooked a chopped onion until translucent.

Then added…


And brought it to a boil. In the meantime, I started boiling the noodles.

(Yeah, I cook in my coat sometimes. I’m always cold.)
Then I added some of this to the pan – a few spoonfuls.


And put the meat back in…

Once it was cooked through – I combined it with the noodles, and some spinach (just for a little green).

Delicious! I ate a few bites of this bowl, got full, took a walk, came home, and ate the rest. That’s how I roll these days.
In the 3rd grade world…
I know I explained this last year, but when my class is particularly well behaved, they get to put a marble in the jar on my desk. When we fill the jar – they get a reward! The reward this time was having an afternoon at the drive-in-movies. The kiddos lounged in their cars while watching Matilda.

And now I need to go to bed because we have a big day tomorrow – a field trip to the pumpkin patch and then a Halloween party when we return!

Those cars are so cute! Your turkey stroganoff looks so good….I like turkey a lot better too! Congrats on the pregnancy that is very exciting. I am a teacher also and I don’t know how you teach and deal with all of the fun side effects of pregnancy at the same time you teach, you are a rockstar!

You should get some wool sweaters. They really are the warmest things ever! I know some are itchy (there are soft ones, too), but you can just fix that by wearing a fitted long sleeve shirt underneath it. =)

Did you KNOW that we do the marble jar here at the house because of you and your class? Was having a hard time getting good behavior out of the girls so we started this at the beginning of the summer. It can be quite effective! ;D
