Beefy

Hello! I had the best day. For no particular reason, it was just great. I worked out for the 6th day in a row (yay!! There is something about doing Crossfit while pregnant at 5am that makes me feel ultra hardcore), which left me with plenty of energy, and ate just what my body was craving all day. A magnificent Monday.

After workout and shower, I wanted vegan chocolate pudding, so that’s what I ate. Dessert and breakfast are pretty interchangeable in my book.

I ate a little more than half of this, then scurried off to school.

For lunch…

I’ve been craving beef like nobody’s business. If you’ve read my blog for any length of time, you know that I don’t really eat much red meat. Maybe once every few months if I’m eating at someone’s house, but I rarely make it or order it at restaurants – it just doesn’t appeal to me. But yesterday, I went out to lunch with my in-laws and ordered beef and broccoli because it sounded perfect and ohmygoodness it was the best thing I’ve ever had. PLUS, I had leftovers for lunch today which were even BETTER than yesterday’s. So salty and satisfying – I guess my body is begging for protein and iron.

For dinner, more beef.


In stew form: black beans, corn, onions, green chilies, and tomato sauce.

And look, I made biscuits!

The easiest recipe ever – you are about 12 minutes away from homemade biscuits:

1 cup flour (I used gluten free)

2 tbs. butter (I used Earth Balance)

1 tbs. baking powder

1 tsp. salt

1 cup milk (I used 2% cow’s)

Mix the flour, salt and baking powder. Cut in the butter. Add the milk and mix. Dump onto floured surface and knead until dough isn’t sticky anymore. Then roll out to ½ inch and cut (I used a coffee mug) into 3″ biscuits. Bake for 8-10 minutes at 450* – does it get any easier?

In the 3rd grade world…

I went to the grocery store before school this morning so I could re-stock my snack drawer.


Green apples, peanut butter, pumpkin seeds, chocolate covered pretzels, and tea

Have food that I love within an arm’s length reach really makes a difference in my day.

  1. Hi, Katie – Just wanted to say that since I’ve been reading your blog, I’ve had some new taste sensations. Now I love to make my own hummus, experimenting with lots of flavors. Last night I made the tofu chocolate pudding! Anyone who knows me, knows that I literally won’t touch tofu, but the pudding is fabulous – tastes every bit as good as a great mousse. Can’t wait to spring it on my vegetarian daughter, and my red-meat eating son! This morning, for breakfast, I had low-fat cottage cheese, pomegranate arils, sprinkled with some great coconut granola. Yum! So now, I’m learning from you! Hope you’re feeling well, and that teaching is rewarding for you. <3, Carol Reynolds

    • Mrs. Reynolds, you just made my day!! To be completely honest, I wasn’t 100% sure about the tofu pudding either – but isn’t it good?! I’m so glad I could broaden your horizons when it comes to food. That cottage cheese mess sounds delicious!

  2. Glad to see you’re craving the BEEF. I hope to one day see a blog post by you with a juicy 16oz Rib Eye, green beans and mashed potatoes… mmm that sounds good… I think I’ll grill some steaks on Thursday. I can’t wait until Elise is old enough to enjoy a steak… Take care.

  3. My snack drawer at work it totally lame right now…actually it’s empty :(
    Must re-stock! Especially in the tea department. I despise drinking cold
    water when I am already freezing cold, so I am a big fan of herbal teas.

  4. When I was pregnant I craved beef incessantly. I actually went from essentially no red meat, to “I’ll take the steak with a side of meatballs, please”. Honor your cravings. You can go back to your habits when you’re back to calling the shots again.

  5. I love those “awesome for no particular reason” days. Especially when you can answer the skeptical comments of those around you by saying , “You don’t need a reason to smile!”

    And oh my god…Crossfit. While pregnant. I can’t even imagine. I am in awe.
