I spent the day craving fruits and veggies…it was delicious. For dinner tonight, I planned ahead. When I get too hungry, I can’t think clearly/rationally, and I end up crying and driving to Sonic.
This evening, while taking a long walk with the Punkster, I dreamed up a scrumptious warm vegan lentil salad for dinner.

Ingredients
- 1 cup cooked rice
- 1 cup cooked lentils
- ½ cup celery, chopped
- ½ cup parsley, chopped
- ½ cup green bell pepper, chopped
Combine all ingredients and set aside
Dressing
- 3 tbs. olive oil
- 5 tbs. red wine vinegar
- 1/3 cup water
- 1 tsp. Dijon mustard
- 1 tbs. agave
- 1 clove crushed garlic
- 2 tsp. finely chopped onion
- ½ tsp. paprika
- Freshly ground black pepper
Combine all ingredients in a jar with a tight fitting lid, and shake until mixed. Pour over lentil mixture and enjoy!
It took about 25 minutes from start-finish (cooking the rice/lentils took the longest time), and it hit the spot. Just what I needed after last night’s kid’s menu feast.

And now if you’ll excuse me, I’m off to devour another greatfruit.



You are too funny – I find after I crave carbs like crazy, the next day I’ll crave tons of veggies!
Never tried lentils…I guess I probably should considering that dish looks so darn delicious! PS – Speaking of grapefruits, I went through this stage in the 3rd grade where I would eat 1/2 a grapefruit every morning because I liked them so much.
With my first pregnancy I woke up one morning wanting nothing but fruit. I had grapefruits, oranges and apples all day every day.

Do you like or have you craved mustard? I’m 16 weeks and mustard and pickles have been life savers. I’ve been consuming alot of bagel sandwiches (heating the meat first) with plenty of both.
Also dates with some pb on them have been going down pretty easy for me as well. Hope you feel better~!
