I get really tired of packing my lunch for the work week. So on the weekends, I try to make sure that my lunch is something easy and sort of special. Today’s lunch fit both criteria.

Making the soup only took five minutes. I kid you not.

It did help that I roasted the kabocha earlier this week and had half of it stashed in the fridge. (To cook it, I just popped the sucker in the oven at 450* for about 45 minutes)
I removed most of the skin from the squash and added some things…


Plus salt and pepper.

Then stuck the immersion blender into it…

Then I ended up adding a little milk because it was pretty thick…

Next, I stuck the whole thing in the microwave for about two minutes to warm it up and voila!

Thick kabocha soup. A quick and easy lunch that I loved.

I’m a huge fan of leftovers for lunch. Clears out space in my fridge and doesnt require any extra cooking!
how funny. im the complete opposite. bc my work lunches are packed, i feel like my non-work ones should be special on the more elaborate end of the spectrum. the quickest lunch i can think of is veggie burgers and hummus. savory oats are a good option too, though.
that looks very tasty! I love shmorgus boards of random things like that. a little veg, a little fruit maybe some peanut butter or crackers.

I love making pizzas with bread or pita: spread tom paste on and add your toppings..my faves are onions, goat cheese, and bell peppers
Wow! That looks really easy to make! I am not a fan of soups that are just veggies floating in water, so this is perf for me!
I used to like making “overnight oats” for lunch because when you get up on a teacher schedule you can assemble them in the morning and they are perfect by lunch time. I also like dippables that don’t need to be heated – bean burgers, crunchy veggies, etc. with hummus, pb sauce, etc.
My go to quick lunch is always a salad. I’ve always got somethings I can throw on top of some greens. I’m impressed with the 5 minute soup though. I might have to try it with some leftover sweet potato I have in the fridge.
This soup sounds delicious. I just caught on with the kabocha trend in 2010. I’m sad I can’t find it anymore! I don’t want to wait until next Autumn.

This week, I am thinking of making some chicken santafe and then putting it in leftover containers. I’m already sick of salad. Although, I have a twice baked potato to look forward to on Monday!
I love when dishes are not difficult to make but turn out looking so pretty! My fave quick lunch is a burrito, if all things needed (beans, rice, veggies) are on hand.

Mmm, that soup looks so creamy and delicious. I know this sounds like a silly question, but what exactly is an immersion blender? Can you explain what it’s for, besides making pretty little soups?

Lunch is my least favorite meal – I hate packing lunches. I tend to bring leftovers, salads, a whole tubs of hummus, fruit, etc.
Ugh, it’s my least favorite meal, too. My school lunches are always so hodge podge.
I make a lot of taco salad type dealios. Those and tortilla pizzas.
