Okay, this is kind of a fall recipe, but my obsession with apples is growing deeper and deeper, so I centered this (vegan) scone recipe around my favorite little gala.

Apple Wheat Scones
2 cups flour
2/3 cup wheat germ
2 tsp. baking powder
2 tsp. cinnamon
¼ tsp. baking soda
¼ tsp. salt
a pinch of ground nutmeg
1/3 cup Earth Balance (or any butter substitute)
1 large Gala apple, peeled and chopped
½ cup vanilla soy milk
¼ cup agave
Topping:
2 tsp. wheat germ
2 tsp. sugar
¼ tsp. cinnamon
Combine the dry ingredients (flour, wheat germ, baking powder, cinnamon, baking soda, salt, nutmeg) in one bowl. Combine the apple, milk, and agave in a smaller bowl. Then cut the earth balance into the flour mixture until crumbly. Add the milk mixture to the dry bowl and mix until just combined.
Turn dough onto a floured surface and pat into a disk – about ½ inch thick. Combine the topping ingredients and sprinkle over dough. Cut into eight wedges and place on a baking sheet lined with parchment paper. Bake at 400* for 15 – 18 minutes. Remove and cool.

I’m currently at my last childbirth preparation class, and I can say – taking this class is one of the best things I’ve ever done. I went into it terrified of giving birth, and I can honestly say that just 12 hours of class has made me feel confident and so excited to bring little Baby Cakes into the world. Now I just have to wait about 3 more months…
In the 3rd grade world…
We are reading a story that takes place during the Great Depression, so I had my kiddos research 5 facts about that period of history this morning.
Two fashion forward boys came up with this little nugget…

I’m glad to hear you say the class has made you excited. Giving birth is probably my biggest fear in the entire world.
Ugly clothes….that is the best comment yet! By the way, Gala apples are my favorite too!!
Ugly clothes….hilarious.
Love those scones!
Today my class was in giggles about farting.
Yes, farting. Some tooted and they kept covering their faces and gagging.
“Everybody farts, people. Get over it,” was my exact response.
Some= someone
I’m not quite sure those boys completely “got it”
We don’t start our classes until March… boo! So glad they’ve helped though.
hahaha, your kids are so funnnnnny!
I love the depression facts, we are currently learning about forces and motion..fun stuff!! And the scones look amazing!
Your recipe looks YUMMY and healthy : ) I’ll have to give them a try next time I’m in the scone mood.
LOVING scones lately. I even just got a new pan! Woohoo!
Wow, time has flown! I can’t believe you’re due in 3 months!
katie!!! my heart is going pitter patter all OVER this page! gala <3
you rock.
AHH DERRRISHHH.. and 3 months!! so excciting so exciting YAY!
Yup, the clothes were probably pretty ugly…
I’m excited FOR you!! Are you really at 6 months already?? Crazy how time flies!
I’m actually almost at 7 months!! Pregnancy is actually 10 months…but no one bothers to tell you that until you are pregnant. But yes, it is CRAZY how fast it’s gone!
Those look great! I love apples in baked goods.
Poor depression age people and their ugly clothes, hahaha.
thats so nice to hear that the class made you feel more comfortable! i just talked to my coworker who had her baby and she told me that she doesn’t understand how in movies you see people yell and scream at others in the room during birth, she said she couldnt speak a single word, it was all about pushing! but she said it wasn’t as bad as she thought! you will do wonderfully!
YUM! I love apples in cakes, breads and baked goods!
Hahahah I love that line about ugly clothes during the Great Depression- the things kids come up w are just priceless.
Those scones look yummy-I’ve never made a scone before but looks good!

haha how cute that is what they came up with:)
Haha…I love the fact that the little boy came up with.
These scones sound awesome! Apples and scones were meant to be together. What a perfect combination.
Glad to hear you are excited for the baby to come! Sounds like a great class.
PS – Those apple scones look delicious! Are they sweet or mild like Jenna’s Oatmeal Scones?
They’re a little sweeter than the oatmeal scones.
I made these tonight and they are great! I can’t wait to wake up tomorrow morning and have one for breakfast.
Oh goodie, glad you liked them, Em!
do you think wheat bran would work for wheat germ?
absolutely – I’m all about substitutions. Give it a shot and let me know how it turns out!
