Cold Day

It wasn’t as much of a snow day as it was a cold day.

It never even approached 1 degree. And see that feels like temperature? Negative 30! That’s why we didn’t have school today AND we don’t have school tomorrow. Yippee for freezing temperatures!

I actually braved the cold to run some errands today, and I wish I had been wearing a face mask – the air was so cold it was difficult to breathe. It’s a good thing I have a Baby Cakes growing inside to keep me warm.

In addition to errands, I did about 60 minutes of DVD prenatal yoga (it was lame), cleaned my house (top to bottom), did a few loads of laundry, and played with my new camera. Just about anything I could think of to evade the pile of papers that needed to be graded today.

Lunch after errands…

bread, hummus, Dijon mustard, spinach, cucumber, sprouts – an open faced sandwich, inspired by my newest favorite place for recipes – Engine 2.

Then I baked some mighty muffins from the same place.

So grainy and delicious – they’re basically oatbran and mashed banana. I can’t wait to make these again and throw some goodies inside – I’m thinking chocolate chips, more nuts, dried cranberries, oh my!

After puttering around the house, I buckled down to grade papers. But not before a snack.

I’ve been craving this green juice ever since I saw Mama Pea drinking it.

It was so good! Just the taste I had been hankering for. It went perfectly with some cinnamon toast hamburger bun.

For dinner, it was more goodness from the fellows over at Engine 2.

Couscous with asparagus and tomato.

And that’s a wrap! I’m so happy to have another
day off tomorrow!

  1. The wind here is outrageous. And that’s what is making it so frigid. It’s still snowing–we’ve got about 8 or so inches so far. The kids here haven’t been in school all week.

    My first place to turn to for recipes is my Google Reader. Then any new magazines I’ve received.

  2. My dad is a firefighter and I keep seeing the Engine 2 Diet cookbook at Whole Foods, and it always makes me think of what I grew up thinking was firehouse meals.
    Ginormous breakfasts, chicken and dumplings, chili, and LOTS of pasta.
    Or his current house, it smells like bacon. All the time!
    Recently, I’ve been getting inspiration from Cooking Light magazine and the Myrecipes online archive.
    Of course, as always blogs, blogs, blogs! :)
    Yes, it’s cold here. We had an ice day today,and it hasn’t stopped raining since 5pm. We’re also supposed to get “snow thunder”. Whatever that is.

  3. This was my first day in Colorado that I have thought to myself, “Maybe I should have double-layered my pants today.” My legs went numb while walking. The cold was UNREAL!

    My favorite places to get recipes are blogs! I don’t really have a favorite – I just look through everyone’s recipes and bookmark the good ones! :-)
    PS – Mama Pea’s recipes are pretty good though. I just get hesitant sometimes because I’m not sure if they’ll work with non-vegan subs.

  5. It’s definitely the coldest here I remember it being in a long time. Not that I’ve been out there to test it. I think it’s like -20 windchill or something. I might try to get to the apartment gym to run today, and I’m very scared of the wind. Brrr!

    Enjoy your second day off! All the food looks delish. Those muffins look awesome.

  6. Negative 30?? That’s awful! It’s cold here in Boston… but not _that_ cold! Actually, it’s sleeting now putting a protective layer of ice over the snow on my car and roads. Hopefully I won’t have to go out in it!

    I hear ya on the cold… this morning the wind chill was -30 and I about died waiting for the bus. Not fun! I wish we have a ‘cold day’ from work!

  8. i checked out the engine 2 website and the recipes look great!!! In my whole foods which is ginourmous they advertise the engine 2 diet cookbook, then have a whole aisle dedicated to only the ingredients used in the book so it makes for easy shopping!

  9. It is freezing where I live and we are buried in ice! ICEZILLA came and wasn’t welcome.
    I subscribe to several cooking magazines and emails. I get alot of recipes from Hungry Girl and Pillsbury :)
