My Nuggets

Nasoya so kindly offered to send me a coupon for one of their products, and I was excited to take them up on their offer. I browsed their website to find a recipe, and decided on the very simple tofu nuggets.

To start, I drained, wrapped, and froze the tofu when I got home from the store. I thawed it out in the fridge last night, and when I was ready for dinner tonight, it was ready for me.

First, I cut it into cubes and pressed using my heavy griddle to get the excess water out.

I let the cubes sit under there for about 20 minutes, and then dunked them in a combo of wheat germ, salt, and garlic powder.

Then put them on a baking sheet – covered in foil and sprayed with non-stick.

Next, I prepared some veggies to go along with the nuggets.

Asparagus drizzled with evoo and sprinkled with salt

Tomatoes with the core cut out and filled with balsamic vinegar and sprinkled with salt

I put the whole pan in the oven at 400* for about 30 minutes.

I ended up dunking my nuggets in bbq sauce because it sounded really good, and it was. Plus, it was an easy one-pan meal with minimal clean-up – always a plus.

In the 3rd grade world…

I think two consecutive weeks of indoor recess is interfering with this little girl’s ability to think rationally:

Wrong. I’m having a baby.

  1. I just had tofu with BBQ sauce the other day too! Luurve that stuff. That’d be pretty phenomenal if you popped out a puppy. Punky would have a friend.. ha!

  2. tomatoes filled with balsamic? intrigued. what happens to the balsamic in the oven? how does it taste in the end? it sounds so good!!

  3. Haha the title of this post totally made me think of the Black Eyed Peas song “My Humps” for some reason.

LOVE your tales from third grade- so freakin cute.

  5. Can’t wait to try this, maybe this weekend! How do you freeze the tofu? From what I read it sounded like you drained it from it’s original pack, then did you just stick it in a freezer bag or something? Thanks!

    • That’s pretty much it! I just drained it, pressed it for about an hour (put a cookie sheet with heavy cans on top) and then put it in a tupperware and popped it in the freezer! It makes the texture so dense!
