Twice Baked Potatoes

Growing up, twice-baked-potatoes were a staple in our house. But I had virtually forgotten about them until I had them at my parents’ house last weekend.

I’m not big on recipes. I rarely use them (except of course, when I’m baking brownies) – so here is more of a method.

Bake some potatoes – without foil. Just wash them, stab them with a fork a few times, and stick them in a 450* for an hour or so. Just until they’re soft.

Then split them open, and scoop the insides into a big bowl.

Add some sort of milk and butter.

Plus some salt and pepper.

Then mash (or whip…I use the whisk attachment on my kitchenaid) them into oblivion.

Next, add goodies.

The possibilities are nearly endless. I went with green onions and cheddar cheese.

Mix, and then refill the ‘tater skins.

Top with more cheese (if you want), and broil for about 5 minutes.

Basically mashed potatoes in an edible vehicle.

  1. I am not really a fan of potatoes, but twice baked ones have caught my attention. I think I will try this in a few days, seems pretty delicious!

  3. I put Ryan in charge of going to the store to get dinner ingredients last night and he came back with twice baked potato fixings. We had them last night too! He didn’t get the green onions which would have been perfect! Twice baked sweet potatoes are good too!

  4. Oh my gosh those look so good and I don’t even think I like twice-baked potatoes. But then again I’m not sure I’ve ever had them so I guess I shouldn’t make that statement until I do :)

  5. I have an impressive half-crescent scar on my wrist from brushing against a hot pan of twice-baked potatoes last summer. That’s the only experience I’ve ever had with the dish!
