After a particularly exhausting workout this morning, I turned into the Very Hungry Caterpillar Pregnant Teacher.
First, I drank one spinach protein shake.

1 scoop protein powder, 1 cup coconut milk, 3 handfuls of spinach, 12 ice cubes
Then, I had two of my favorite things.

Basically grape nuts

More coconut milk
For snack, I ate my way through three things: two apples and half of a toasted cinnamon bagel.
When lunchtime rolled around, I had a superb four item lunch.

toasted bagel + spinach + cream cheese + green onions
My fifth meal was a very green popsicle.

Punky was jealous.
For meal number six, I ate my way through some protein packed pepperjack mac ‘n cheese!

Ingredients:
- ½ box pasta shells
- ½ block silken tofu
- 1 tbs. Dijon mustard
- 1 cup shredded pepper jack cheese
- 3 cups spinach
- salt and pepper
Boil the pasta. In the meantime, blend the tofu, mustard, salt, and pepper. When the pasta is finished, drain, return to pan, and add tofu mixture. Then stir in the cheese and spinach.
In the 3rd grade world…
I had my class write poems about rain today. It was rainy, and you know the old adage: April showers bring May flowers!
They wrote their poetry on a picture of an umbrella, and I hung them from the ceiling.

Rain makes me sad
It reminds me of Jr.
He was mostly in a ball
I would throw him up as a ball
I miss him

Aww.. poor Jr. Your students seem to be really torn up about it!
What a cute and creative idea to hang umbrellas from the ceiling. Love it!
Haha that poem made me laugh even though it’s really sad! I found a bunch of roly-polies underneath my horses’ water trough today. Hehe they can have some of mine.
I love the rain poem hanging from the ceiling! We are writing informational reports about toys invented in the 1950s right now, it’s way fun!
It took me a second to remember who JR was, but when I did I totally cracked up.
Oh, that is just so sweet! I was definitely the kind of child who could miss a rolie-polie bug as I remember crying horribly once because I accidentally killed a fly.
Poor Jr. At least he will never be forgotten.
That mac n cheese sounds yummy!
A) I have to try that Mac and cheese….I love anything with pepper jack cheese
B) that poem honestly just made me laugh out loud…poor junior
The mac ‘n’ cheese looks so good! spinach sounds like it would be a great item to add to it.
your stories about your 3rd graders always crack me up
O my goodness. I would laugh all day if I had your job. It’s so sad yet so funny.
Haha, poor kid.
The mac and cheese looks fab lady!
hahaha omg your posts make my day!
Cute, cute, cute! I love reading the 3rd graders thoughts. Here is one from my 1st graders: “Does chocolate milk come from brown cows? Hehe. For the past week they all are trying to get me to tell them if the Easter bunny is real!
cutest idea for a post theme. ever.
[...] Mac & Cheese recipe stolen from Yes, I want cake. I left out the tofu & spinach at the last minute out of laziness since I got home late last night and was hungry. Also just used random cheese since I don’t like spicy so it could have turned out much better. I’ll wait until I can have real noodles to try this one again. [...]
