Happy Saturday!
Today is Mr. Meeker’s birthday! We were kind of hoping I could give him a daughter for his birthday, but…Baby Cakes is comfortable right where she is.
So, cinnamon rolls were the next best thing.
Mama Pea’s Vegan Pumpkin Cinnamon Rolls – minus the pumpkin because we didn’t have any. (I added a 2 tbs. of vegetable oil to keep them from drying out)
I popped out of bed at 6:00 to get these started. Meeker has to work today, and I wanted to send him off right. Unfortunately, I underestimated the time it would take for these yummy babies to rise, so I was pulling them out of the oven as Meeker was heading out the door.
However…
I caught him picking the center out of the pan as he was leaving. Proud wife.
Just don’t tell him they’re vegan.

I made vegan cookies the other day and my husband looked at them like they were poison, then I made him eat one and he said they were the best cookies I’ve ever made ; ) Men sometimes are so silly!
