Along with Easter, we’re still celebrating Meeker’s birthday today – and he requested a special cake. (I would like to think that Jesus would have appreciated this cake after 3 days in the tomb, too.)
Combine this frosting…

…with these berries

Put it all on top of a white cake and you win. It doesn’t even matter what the game is. You win.

It’s far from being the most glamorous cake on Earth (in fact, it’s pretty messy). But it tastes delicious. Especially when that berry juice soaks down through the pillowy frosting into the cake. Hallelujah, hallelujah. It’s the perfect cake for an Easter/Birthday celebration.

White Cake Ingredients:
½ cup butter, softened
1 ½ cups sugar
4 egg whites
2 t. vanilla extract
2 cups all-purpose flour
1 t. baking powder
½ t. baking soda
¼ t. salt
1 cup buttermilk
Directions:
In a large mixing bowl, cream butter and sugar until light and fluffy. Add egg whites one at a time – beating after each addition. Beat in vanilla. Combine the flour, baking powder, baking soda and salt. Add to creamed mixture alternately with the buttermilk, beating after each addition.
Spread evenly into two parchment-paper-lined pans. Bake at 350* for 30 – 35 minutes, or until a toothpick inserted near the center comes out clean. Let cool completely before frosting.
Seven Minute Frosting – After the cakes have cooled completely, spread half the frosting on one of the cakes. Layer the second cake on top and spread with the remaining frosting.
Berry Topping:
1 cup blackberries
5-6 large strawberries, cut into bite sized pieces
1 T. sugar
2 T. water
Add all ingredients to a small saucepan and cook on low for 2-3 minutes. Once the berries have cooled, spread/pour berry mixture over the frosted cake.


That is a gorgeous cake! I am definitely trying that next time I make a cake.

kinda off topic but i remember you saying that you used to nanny? well i’m nannying for a family with two boys ages 5 and 8 this summer. I have a little sister who is 8 who basically loves all things glittery and spends lots of time making up dance routines and playing mermaid. but the boys are a different animal entirely…what are some fun things you did with the kiddos you nannied?

Thanks for your sweet comment and prayers – I’ll take all the support I can get! I wish I had some brilliant and novel ideas for you! When I nannied, it was for 2 boys and 1 little girl, so we had to do a variety of activities. Our usual spots were:
Library/book store dog park playground park hiking (this was in Boulder, CO…so there were A LOT of places for it!) swimming pool just playing in the backyard!
like I said, this was in Boulder – so we a had a lot of outdoor options. Also, all 3 kiddos (boys and girl) were really artistic and imaginative, so when he had to be inside, we did a lot of painting, playdough, fort making, art projects, etc. I checked millions of books about crafts out at the library, and even the boys liked a lot of them.
