Sleeeepy.
I woke up at 1:39am and couldn’t go back to sleep. I read part of this book. I cleaned the house. I played with the cat. I went to the gym.
After I got home, I managed to fall back asleep around 4:30, and slept like a rock until about 6:00.
Whereupon I drank some juice…

ate ½ of this bowl of oatmeal (it lost its appeal midway through)

and finished it all off with a few bites of cake.

Lunch

Two veggie wraps: spinach, cucumber, bean sprouts, spicy mustard

mangoes are hard to slice with a butter knife

Zucchini and carrots were eaten plain. Sweet potatoes were dipped in spicy bbq sauce.
In the 3rd grade world…
I get called a lot of things throughout the day:
Mrs. Unger, Mom, Dad, Grandma, Mr. Mendez (the other 3rd grade teacher’s name).
I respond to them all.
But there was a new one today that made me laugh. A little girl walked up to me today, gave me a hug, and addressed me as Mrs. Baby…
Apparently, my kiddos are as preoccupied with Baby Cake’s approaching arrival as I am. Maybe it’s because my bulging belly squished her in the face when she attempted to wrap her arms around me for a hug.




I applaud you for every trying to cut a mango with a butter knife.
And I am getting quite the chuckle imagining a little girl smushing her face into your belly as she tries to give you a hug!
Hey Katie, just have a quick question! Your eats always look so good and I know with baby and all your eating patterns are kinda weird! and we ALL eat different amounts eat more one day less the other, its all good. But do you never eat protein? I just rarely notice protein. im one of those people who would pass out if i never had any. do you eat other things too?

First of all, I don’t always photograph all my food in the day – and there is probably some protein that escapes the camera/blog. But to be honest, I don’t even consider protein (or any of the macros)! I try to eat intuitively, and it just never occurs to me. In the past, I’ve experimented with heavy protein diets (low carb), and they always failed me completely. I think my body must require less protein than most people. My diet seems to work for me – and that’s about all I can say.
Well thats good then!! Just listen to your body! I don’t count mine at all but I make sure I have at least a little at some meal whether it be hummus, beans, turkey, cottage cheese, pb, egg whites, somthin or another! But thats good that you eat intitively!

Hahaha, I read your blog especially because I love the “in a 3rd grade world” segments! It always makes me smile, or gives me a laugh and is one of the things that I really love about your blog, just wanted to let you know!
I read through the other comments – and my body requires less protein too. I am prefectly happy with just eating a ridiculous amount of veggies and carbs.. and my body likes it too. I do try to get some protein in but I don’t stress about it.
Can you imagine what the kids will be like the day that you are finally gone and they know that Babycakes is on her way? They will be bouncing off the walls–the poor substitute!

I always get asked where I get my protein from… Most people actually get WAY more than they need to and that can be hard on your kidneys (among other things). I get plenty of protein in my vegetarian diet without thinking about it. You do eat meat right? I’m sure I’ve seen pics – I think the last one was some roast with a recipe from your Grandma?

looks like a yummy day, mrs. baby ( bahaha)! hopefully you’ll still be able to find time to take pictures of the lovely things that go in your belly on a daily basis after the little one gets here. i am so anxious/excited for you! we can’t wait to meet the lil cakester. and i’m soo glad that you listen to what your body needs, i’m a nutrition major, and you don’t really need all that much protein. fruits and veggies have protein, just not huge amounts, but your cells are equip with protein banks which can store amino acids and release them into the blood stream as necessary. God’s wisdom in creating our perfect machine bodies is astounding! as long as you’re eating a good variety of real foods, it is virtually impossible to be protein deficient!
