I’m officially a week over my due date.
I feel like a ticking time bomb…I could go into labor at any second. (Yes, I’m walking a lot. Yes, I’ve eaten spicy food. Short of drinking castor oil, I’ve tried it all). For 3 weeks, I’ve had contractions all day, every day – and I keep thinking ‘this is it’ – but it’s not. Just my body prepping for the big event. Tick-tock, tick-tock…
Because it’s hard to focus on anything for too long (my mind wanders to labor if there’s even a hint of downtime) – I filled my day with menial tasks. Think lots of laundry, grocery shopping (3 different stores), lunch with in-laws, more laundry, walking, more walking, thank-you-note-writing, and before I knew it, it was dinnertime.
It’s been a while since I’ve cooked dinner, so I wanted to make it a special event.
Pistachio Crusted Salmon
Combine melted butter, Dijon mustard, and honey and brush it onto the salmon. I think I used about 2 tablespoons of each.
Then combine cilantro, panko bread crumbs, and pistachios in a food processor. About ¼ cup of each.
Then pack it all onto the salmon, and bake at 450* for about 12 minutes.
On the side, I cut yellow and green squash with my curly fry cutter, and sautéed them in olive oil and garlic for about 10 minutes.
It’s amazing how much energy I can muster up for dinner when I don’t spend my day in the 3rd grade world. Although it was weird not going to work today, I think it was time to call it quits. You never know when I might go into labor. Tick-tock, tick-tock…
