I couldn’t have done it without you all.
After my cookie calamity yesterday – I woke up with a need to succeed with the oatmeal cookies. I got so many good suggestions, and most of them fell into one of three categories:
- The butter was too soft
- I needed more flour (thanks to the altitude)
- I creamed the butter and sugar too vigorously
So this morning I left the butter on the counter to soften during my walk (only about 40 minute), and came back and whipped up these cookies by hand – just to avoid overmixing the butter/sugars.
Sometimes I get a kick out of watching my kitchenaid mixer run for minutes…the hand stirring eliminated the fun in that.
I used Jessica’s original recipe but made a few adjustments: 1/4 cup more flour, no milk, and no chocolate chips (because I used them all up yesterday).
Perfection. I think Meeker and I ate 3 each, right out of the oven.
