Hello and happy Monday! Babycakes and I started the week out with a hike this morning.
But not without some fuel before we left.

Dates stuffed with peanut butter. Nature’s candy.
When we got home, I was hot and sweaty. All I could think about was something frosty for breakfast.

- 1/2 cup unsweetened soy milk
- 1 scoop protein powder
- frozen banana
- 6 ice cubes
- ½ cup water
- 2 T ground flax

Tasted just like a milkshake. Mmm, lick.
Lunch

a jumbo sized ensalada made from homegrown lettuce. Plus some corn (raw, cut off the cob), cucumber, ground flax, and a grilled zucchini.

But the dressing, oh the dressing. It was an experimental creamy success. Into the blender, I combined:
- 2 ounces silken tofu
- 1 T. Dijon mustard
- 1 T. soy sauce
- 2 T. nutritional yea
- Salt/pepper
Loved this stuff. I also love it when kitchen experiments are successful.
Dinner

That totally does look like a milkshake.. what kind of protein powder do you use? I’m thinking of trying out some Sun Warrior because I want to avoid the whey-based ones..
I have sun warrior, but honestly, I don’t like the taste. But I think I’m the only one on earth, most people LOVE it. I have weird taste buds. This was some generic whey based protein that Meeker brought home from work (he’s a personal trainer)
Dates+nut butter=awesomeness. I’ve been loving grilled zucchini too!
I’m so with you on the dates + peanut butter thing – it’s like the perfect snack (or meal if you eat enough of them!). My Monday was okay – but not NEARLY as good as yours! I wish I could’ve gone on a hike with you and Adrienne!
oh gosh. making some homemade tofu dressing is so on my to-do list.. your ensalada looks fantastic!
Tofu dressing? My aunt makes a mean sweet potato dressing…I wish I had asked the recipe for that.

Love your creative blender dressing, that combo of flavors sounds perrfect. I’ve been eyeing Mama Peas eggplant recipe, your romaine garden bounty= my eggplant garden bounty! Too bad romaine & eggplant don’t freeze well. I guess we just have to eat ‘em like crazy…no objections here! Glad to see it came out nicely for you, it’s dinner here tomorrow
I was just thinking yesterday what a shame it is that lettuce doesn’t freeze. Dang it!
