We have a really good problem happening in our back yard.

The lettuce is growing out of control.

Which means I can’t stop making salads. Even if I wanted to.
Today’s salad was born because of an impulse purchase I made at the grocery store…

Without a doubt, the best veggie burgers I’ve ever had. They taste like fried eggrolls, and the list of ingredients is short. Also…no beans. Which makes my belly happy. And my family happy. If you get my drift.
I’ve embarrassed myself, back to the salad.

Ingredients:
- Lettuce
- 1 cup grapes, sliced in half
- Veggie burger, cooked
- Feta cheese
Dressing
- 2 T red wine vinegar
- 2 T olive oil
- 1 T Dijon mustard
- 1 t lemon pepper seasoning
- sweetener (I used ½ packet of stevia, but I think honey would be really tasty. I was just out of honey.)

Yup, too much lettuce is a good problem to have.

Duuuuude (too much?) I make these types of salads all the time! I fry up a Boca Burger, cut it up and stick it in a salad!

You can never have too much lettuce! I used to love those burgers, they were the only ones I ate, I would even bring them to BBQs to have instead of regular burgers! I’m so sad they have soy in them and I can’t eat them anymore.

home grown lettuce makes me so happy. Too bad mine never popped up this year.
It is the ONLY thing that grew successfully for us this year. Haha, better luck next summer, I guess. I think I have a brown thumb.
Oh yum! I use those Dr. Praeger burgers to make a salad bowl all the time- I love them! They are by far my favorite veggie burgers.. I know everyone raves about Amy’s and Morningstar, but they both have a weird, fake taste in my opinion.
I thinking having too much lettuce is problem one of the best problems to have.
We currently have the opposite problem, we have no lettuce at our house. I should probably fix that.

I really wish I had a garden to grow some veggies in! I only have a couple of pots on the window – better than nothing
I just bought those veggie burgers and love them! Just .. don’t put them in the toaster to crisp them up… Oops!
Our garden has all but dried up…with the highs everyday hitting 105 and 106 and no water (it hasn’t rained here in 3 months) those little vines just couldn’t take it.
Too much lettuce = too much happiness. In other words, that’s a very good thing indeed.
And I love, love, love those veggie burgers as well. They’re one of my faves!
This is like one of my favorite salads I get for lunch! They use goat cheese and apples but I bet the feta and grapes are awesome too! I’ll have to try making my own.
So jealous of your lettuce! An excellent excuse to have lots of salads, which is about the only thing that sounds good with the heat. I still haven’t tried those veggie burgers, but I’ve heard nothing but good things about them.
