Okay, now that that’s out of the way…I took a hint from The Hippie, and made a twenty minute dinner tonight.
- one bag frozen veggies (I used edamame, green beans, spinach, and asparagus)
- 1 T mustard
- 1 t garlic powder
- 1/4 C reduced sodium soy sauce
- 1 block of tofu, sliced and pressed for an hour (see this post for my very high tech method)
- 1 T grated ginger
- 2 C cooked brown rice (or if you have a 20lb bag of white rice that’s been sitting in your pantry for two years, that will work. Hypothetically, of course)
- Chow Mein Noodles
Combine the ginger and the soy sauce and place the pressed tofu in the sauce to coat. Then broil the tofu for 5 minutes on each side.
Sautee the frozen vegetables until cooked through. Add the mustard and garlic powder.
Combine all the ingredients and toss the chow mein noodles on top.
Start to finish, this took exactly 20 minutes – and that’s only because of the rice. Otherwise, it would have been more like 6 or 7. Easy, right?

And I love love love quick and easy stir-frys. They are one of those meals I make at least once a week due to complete laziness.
i never really hop on the tofu bandwagon but i always want to buy that tjs premade tofu, i feel like i might buy that for this stir fry recipe, for you know just in case purposes haha

Question: So do you press the tofu, then marinate, then broil? I checked out your press and I am very im-pressed!
Just need the basics. I have never tried tofu unless it’s the little soggy nuggets at the bottom of miso soup in a restaurant and that just grosses me out. I’m having a harder and harder time eating meat lately so I’m really looking for alternatives and considering giving up most of my meat for good.
Yes, that’s exactly what I do. Drain (from the liquid in the package), cut, press, marinade (I usually only do that for 5 minutes or so…I’m impatient), then broil 5 minutes on both sides. It’s perfect that way!
your tofu always looks better than mine! your meal is making my mouth water…
Did you know that you can freeze cooked rice? I’ll make a big pot, portion it out and then freeze it. Takes a couple of minutes to thaw in the microwave and you’re good to go!
