I’m happy to report that I had a much better workout this morning. Sixty-five degrees and sunrises agree with my running shoes.
When I got home, I wanted overnight oats. But I lacked the foresight for that last night, so I had to go with one hour oats instead. In the blender:
- 1/2 cup oats
- 1 cup coconut milk (the beverage in a box, not canned)
- 1 packet stevia
- 1 T ground flax
Then I let that sit in the blender (unblended!) in the refrigerator while I fed Adrienne, did a load of laundry, and took a shower.
Then I blended. And added:
- 1 T nutritional yeast
- 5-6 roasted almonds
- 5-6 chocolate chips
And blended some more. Then plopped a spoonful of almond butter on top. It promptly sank to the bottom.
I think I might like this combo more than I like overnight oats – they got all puffy and delicious in that one hour. I think that’s all they really needed.
Also, I started reading this book this morning while Baby A was eating.
I pretty much want to cancel any plans I had for today and finish it up. Already hooked.



Hahahaha – that’s just what I’m like when I’m sucked into a book.
And I love the concept of one hour oats – work with what you have (I always lack the foresight for overnight oats…it’s so unfortunate!)

What a lovely breakfast! I have never thought of adding nutritional yeast to a ‘sweet’ oatmeal batch…. does it have that sweet/savoury balance?
I have been wanting to plend my oats… the texture looks fabulous!
Honestly, I just like the gritty texture of nutritional yeast. It almost makes it taste (feel?) like cookie dough to me. And yes, a little savory going on, too – but barely noticeable.
That. Looks. So. Good. I never think about eating oats for breakfast. I’m an eggy type of gal. But my life has been taken a new and most spectacular direction.
I of course write this as I’m eating leftover pasta. OOPS.
Meeker eats spaghetti for breakfast almost every day. You guys are weirdos.
I haven’t been in an oats mood this summer – but now that it’s starting to look like fall, I might have to pull them out. Oh and add pumpkin!

Okay that is the best book EVER!!!
HEAB added nutritional yeast to her oats once and commented that it tasted lie cookie dough. I haven’t been daring enough to try it though.
I stole the idea from her! It’s really just the gritty-ness that reminds me of cookie dough…delicious.
I read that book in less than 24 hours on vacation this summer. I think I finished it at 3am actually. Best thing ever. We are book twins.

I was recently reading through your archives and noticed the book recommendation. I’m 90% finished with this book and also wanted to cancel any and all plans to finish it and it’s killing me that it’s taking me 3 days to read! Love this book!
