Babycakes Friday: Strawberry Shortcake

I don’t want summer to end.

The peaches, the strawberries, the long days, the pool…it’s just too good. I say this every year – but I want to move somewhere that has weather like Colorado summers year around.

Unfortunately, I don’t think that place exists. Also, it’s already September, so it looks like summer has ended whether I wanted it to or not.

It can’t stop me from making strawberry shortcake….which is not a fall dessert. Or breakfast, in my case.

I made these little shortcakes last night at 10 o’clock. That is rapidly become my most productive time of day.

Then this morning, I came in from my workout, and finished up these summer beauties.

Too bad it’s sixty-degrees outside. Otherwise, I would package them up and head to the pool. In my dream world, I live at the pool and eat (strawberry short)cake all day long.

Gluten-free, vegan, Babycake, please.

Also, I found these pictures of my babcakes last night (during my most productive hour) and cannot believe how much she’s changed. My heart gets so squishy when I look at that small wrinkly two-day old. Where did the last 3 months go?!

This is a post in a series I’m doing called Babycakes Friday. Each week I review a recipe out of the Babycakes Cookbook. I have no affiliation with the company, I just really like healthy treats.

  1. I know it’s already been said, but BabyCakes should be paying you! You make these desserts look SO good!
I can’t believe it’s Fall either…but I’m actually happy it’s here! Gives me an excuse to buy candy corn..and yes, I already have.

  2. Well you have till the 23rd before Fall actually starts but you might be feeling it now. I’m in Florida and it’s 87 degrees so I don’t feel like Summer has left. The shortcake is making me hungry it looks fab! You’re Babycakes is too cute. My Monkey will be 5 months on the 7th. I’m still wondering whee the time went. It goes by so fast and they grow so quickly. Love your blog. Enjoy the last days of summer with Baby A! :-)

  3. Wasn’t it red velvet cupcakes that you made at like 10 at night?? I still can’t believe that you managed to hold off eating them until the morning… That is talent!
