I had to document my first sweet potato of the season. Covered in goat cheese and toasted pecans. I put a couple of ‘taters in the crockpot (wrapped in foil) and then went to the library for my weekly tutoring.
One little boy I help on Mondays forgot his homework, and his mama had to go back to school and get it while we read a story about ants. She was more than slightly irritated and I remembered how much I love 8 year olds.
Then when I got home I remembered how much I love sweet potatoes.
