Yes, it was a busy weekend. Busy and fantastic. Thanks for bearing with my absence.
I woke up craving routine. A workout. Live with Regis and Kelly. Breakfast. Coffee. More coffee.
If you’re like me, you’re thinking…oatmeal, blah, blah, blah.
I don’t even really like oatmeal. But guess what I added to this?
Coconut flour!
It’s my favorite flour. It adds the best texture and flavor to everything. So, it made me like oatmeal. The chocolate chips didn’t hurt either.
Coconut Flour Oatmeal Cake
- 1/2 c oats
- 1/2 c water
- 1/2 cup almond milk
- 1 t agave
- 1 T ground flax
- 2 T coconut flour
- a few chocolate chops (optional, but totally recommended)
Combine everything but the chocolate chips into a small saucepan and cook (stirring frequently) until the liquid is absorbed. Pour into a ramekin (or any microwaveable safe dish) and microwave for 2 minutes.
It may overflow. Mine did, but then settled back down nicely once it cooled.

I can’t believe a little bit of coconut flour resulted in that beaut! And I do like oatmeal, but only when it’s really thick and creamy.

I’m an oatmeal lover. I eat it practically every morning.
I hardly ever think about making oatmeal, but you may have just made me a believer. And uh, you’re right. Pop those chocolate chips into my mouth like popcorn.
Punky and Brutus ARE adorable! I like a steaming bowl of oatmeal with walnuts and raisins and a tiny bit of warm milk to stir in. I’ll have to try the chocolate chips (can’t believe I’ve never thought of that) and the coconut flour.
What a wonderful variation to such a routine breakfast food! I have oatmeal nearly every day but have never thought about adding flour to it…but I have definitely added chocolate chips:)

I actually don’t really like oatmeal at all. I feel strange to be a food blogger who doesn’t like oatmeal but I just think it’s bland and mushy. I prefer to eat my breakfast carbs in the form of english muffins or potatoes (home fries anyone?)

Love oatmeal! My favorite is Scottish (I just grind Steel Cut) made with banana and egg whites. This morning I tried oat bran, which I liked a lot more than I thought I would.
I don’t like oatmeal near enought to be a healthy living blogger, but on the normal people scale I love it! We learn about how awesome oats are for heart health in all of our classes and I’m always thinking that I should eat them more often.
I’ve heard they’re supposed to be good for nursing mamas, so I’m trying to eat more as well! Good luck to us.
I love oatmeal…but not the healthy kind. Growing up, my dad would make stovetop oats with about a stick of butter and a heavy pouring of brown sugar. SO good! Makes me happy when I think about it!
That sounds amazing. I sometimes like ice cream on my oatmeal. Probably the same nutritional value as your dads!

But I’m in love with coconu flour! I’ve made a similar cake with cocoa powder and a bit more flax. I’m a big fan of quinoa flakes. Lovely un “jizzy” texture!
I am with you for sure. What’s the big deal with oatmeal? You have to add 10 things to it just to make it taste like anything. Three cheers for coconut flour.
I love oatmeal. My SIL uses a lot of almond flour in baking, but I have yet to hear of coconut flour…need to try this!

I’m glad I’m not the only one on this blogopshere who isn’t wild about oatmeal. I don’t hate it but it’s not my first breakfast choice. I’ve bookmarked this recipe to try out!
Couldn’t have said it better mysielf…I’m just not that wild about it. Coconut flour, however – I am wild about that.

I have seen it at Whole Foods, but got mine at a grocery store here called “sprouts” – I bet any natural grocery store would have it. But maybe cheaper online!

Oh my gosh. Brutus is absolutely adorable. I have always wanted a great dane. I would take him in a split second. I bet he is a real handful. But loved very much.
