I did it. I cracked open a can of pumpkin.
Meeker was confused why I didn’t just bake a pumpkin (the one in the above picture), scrape it out, get rid of the seeds, puree it and make my own.
Um, the canned kind is easier?
Way easier. And it’s only $2.
Maybe someday when I have a couple of hours to kill, I’ll use a real pumpkin to make delicious things, but today is not that day. (And after my explanation, Meeker agreed that my $2 canned-pumpkin-plan was a better option…obviously).
Oatmeal Pumpkin Cake
- 1/2 c canned pumpkin
- 2 t maple syrup
- 2 T flax seed
- 1/4 c rolled oats
- 1 t cinnamon
Combine all ingredients and pour into a lightly oiled ramekin (or microwave safe dish). Microwave for 2-3 minutes until the result is cake-like.
Yes, I want $2 canned pumpkin cake.

I always wonder why people go through all the time and effort to roast, scrape and puree their own. Canned is $2 well spent!

YUM! Quick, healthy and nutritious!! I read somewhere that there isnt really a nutritional difference between the canned and the real pumpkin…makes me feel better everytime I reach for the canned pumpkin.

I felt pretty cool when I used the whole pumpkin, but canned is just so much easier, and I don’t think noticeably different. That cake sounds great!

My roommate went to all the trouble of cooking “real” pumpkin in college… and after all that we both preferred the canned variety anyhow.

Ha, ha. Meeker sounds a lot like my hubby. My husband Nate also once asked me why I didn’t just use fresh pumpkin. I think I stared at him as though he had two heads… Ha, ha. Yes, canned pumpkin is a million times easier and faster!
