Which, in turn, made me fall head over heals in love with this soup.

You guys, it’s kind of sweet. Not like monkey bread sweet – but just warm and cuddly and sweet. Can you describe a soup like that? Whatever, I’m doing it.

Sweet Potato & Lentil Soup

  • 1 sweet potato, cut into chunks
  • 1/2 red onion, chopped
  • 1 c lentils
  • 2 carrots, chopped
  • 1 t garlic, finely chopped
  • 1 t ginger, freshly grated
  • 1 t salt
  • 1/2 t dried thyme
  • 1/2 t cumin
  • 5-6 cups vegetable broth

Put all ingredients into a slow cooker and cook on high for 4 hours, or until vegetables are squishy and…well, sweet.
