When does a salad turn into something that’s not a salad?

We’re expecting snow tonight. Lots of it. And so a cold salad just wasn’t in the cards. However, I still wanted vegetables in mass quantities.

So I roasted them all.

Does that mean I ate a salad or a bowl of roasted vegetables with goat cheese and balsamic vinegar?

Whatever it was, it was perfect. I’m having a love affair with goat cheese lately. Oh, and roasted cabbage…have you ever tried it? It’s the most unexpectedly good thing I’ve had in a while. I tossed everything with olive oil, salt, and garlic powder, then roasted it all at 400 degrees for about 30 minutes: beets, a potato, carrots, and cabbage.

Go try roasting cabbage, I dare you not to like it.

  1. I love the idea of roasting all the veggies and making a huge bowl of them. I ALSO love the idea of balsamic vinegar on top!

    I can’t believe you’re expecting snow!!! That’s such craziness to me. I’m also a little jealous that you and Baby A and Meeker get to be all cozy inside though!!!

  2. I think my vegetable intake has quadrupled since I started reading your blog a few weeks ago! Those veggies look so delicious.
    Can’t believe yall are getting snow again, already… I have a friend in Denver and I’ve wanted to move there for years, but I am too chicken about the snow! I just visit instead. The mountains fill up my heart, then I go home to the GA heat. :)

  3. Can’t we call it a roasted vegetable salad and call it even? Whatever we’re calling it, I just chopped up the veggies I had in my fridge and threw them in the oven… AND i have goat cheese left. Thanks for deciding on dinner for me!

  4. I have a hard time calling my cold veggie mix a salad since there are so few salad greens in them! I have taken to tossing my roasted veggies (thanks to your inspiration!) into my cold veggie mix as well for even more fall veggie flavor! My coworkers are so jealous of my yummy food but they go and buy mashed potatoes, nameless meats and soggy veggies from the cafeteria anyway. I will have to try tossing my roasted veggies in the oil and seasonings before laying them in the pan like you do. I often feel like I’m trying to be you lately with all this veggie eating I’m doing and I’ve lost 5 pounds accidentally eating like this! Yum Yum yummy!

  5. roasted cabbage sounds amazing! I am obsessed with roasted veggies and goat cheese combined! Goat cheese is my all time favorite food. I’m beyond obsessed I just wanna jump through the screen and eat your bowl of veggies!

  6. That is totally 100% a salad, and a bowl of veggies. It’s both. I put roasted veggies in my salads all the time because I love the contrast between cold greens and warm vegetables. I’m currently eating a SALAD of sauteed kale, onions, pan fried walnuts, roasted beets and roasted carrots. It would be 100% better with goat cheese, but I don’t have any!

  7. I think that anything that has a dressing is a salad. Lettuce is just one vehicle. I’ll have to try roasting cabbage the next time I’m trying to figure out what to do with the left over 3/4 that I usually have. And snow? It was 83 degrees here today… I can’t even think about snow.

  8. i too am having such a love affair with cabbge!!! I love it and find there are SO many ways to use it! at the restaurant I went to this weekened in maine, we ordered a side of braised cabbage that was served with caramalized onions…it was one of the best things I have EVER had and need to replicate it!

  9. You’re getting SNOW? Oh my, my, my.. you are invited to DC anytime my dear. We won’t be even imagining snow for at least another month (I think). And I think you had a bowl of roasted veggies ;) but I personally think roasting takes vegetables to the next level. LOVE.

  10. Um, I don’t care what you call this, it looks AMAZING!!!! I’ve roasted kale, but not actual cabbage. And I just made a huge impulse buy of goat cheese at Costco and don’t know what to do with it. I need your help. I’ll try this first, but what else?????
    PS_ just watched your video at Lindsay’s List and love that you have your little one in the video. She was a lot quieter than my guys. He he!

  11. Considering its topped with goat cheese I would name it heaven in a bowl! I managed to fit into each meal I had today- breakfast it was jam and goat cheese on toast– then goat cheese stuffed dates throughout the day. Its my favorite cheese fo sure. Sorry for the tangent but it really excites me

  12. Someone thought they saw snowflakes here a few nights ago… I’m just not ready for it yet! I hope you don’t get too much of that white stuff! I always roast veggies but never thought of adding cabbage… this looks delicious!

  13. Mmm, roasted cabbage sounds so good. I’m kinda addicted to just raw red cabbage lately. Who knew cabbage could be so good? I know I didn’t before it hit my lips last week. To be honest, I can’t remember the last time I had cabbage before this month…so now I’m like overloading to make up for lost times. I hope it understands.

  14. I am HUGE on the roasted veggies. I know many say raw veggies pack more nutrients and vitamins, but… gosh, there’s something about the flavors when you roast them all together that’s just perfect. and your balsamic/goat cheese is making me drool.
