Remember these pumpkin oat cakes?
Well I woke up wanting cake for breakfast (what’s new?) and decided to amend the recipe a bit. I have a hard time leaving well-enough alone. The other version is good, but I wanted something that really tasted like cake. And could be made in 5 minutes.
This really tasted like cake. I mean it. (The addition of chocolate chips never hurts either)
Pumpkin Oat Cake II
- 1/2 c oats, raw
- 1/2 c pumpkin
- 1 T peanut butter
- 1 T walnuts, broken into pieces
- a few drops of stevia (or any sweetener: sugar, maple syrup, etc)
- 1 T ground flax seed
Combine all ingredients and put into a microwave safe dish (I used a ramikin) and microwave for 2 minutes. Then flip out onto a plate and enjoy.
I topped mine with a mix of maple syrup and peanut butter. Oh, and chocolate chips. But you saw that.

I could totally make this because I have all ingredients. Except for peanut butter… I’m afraid to keep peanut butter around the house because it’s gone in a day if I do.

we certainly have similar eating habits – I make something very similar to this, just without peanut butter and I bake it [no microwave]. this is totally my kinda thing. alright, i’m adding the peanut butter and going for a second breakfast. Very normal for me.
