This is the easiest recipe. I made them for a church thing last week – and people were practically on their knees begging for the recipe.
But I have a secret. Shhhh…it was sort of an accident. I used to make these chocolaty saltines when I was a little girl (because they’re so dang easy!) and wanted to make them again last week.
But I was out of chocolate. And nuts.
So I searched in my pantry and came up with some things I thought might work out.
They worked out deliciously.
You probably have these things in your pantry, too – and if you have 15 minutes, you have time to make these. Actually, you probably have time to make them and then eat half the tray.
Butterscotch Toffee Saltines
- 1 sleeve saltine crackers (or something similar)
- 1 c butter
- 1 c brown sugar
- 1 c butterscotch chips
- 1 cup white chocolate chips
Lay all the saltines in a single layer on a foil lined cookie sheet. Melt the butter and whisk in the brown sugar. Pour that gooey goodness over the saltines. They will be swimming in sugary butter.
Bake at 425 degrees for 5-6 minutes. Remove from the oven and sprinkle the chips over all of the crackers. Let the chocolate get melty, then use a spatula to spread it in an even layer over the crackers.
When it’s cooled, break it into pieces.
Can you believe tomorrow is Thanksgiving?! I’m having it at my house and I’m excited! Now I just need to figure out how to make a Turkey. If it doesn’t work out, I’ll just serve butterscotch toffee saltines and call it a day.

I often make these with chocolate instead of butterscotch. Truth be told I’m a bigger fan of butterscotch than chocolate (please revoke my women card accordingly). Can’t wait to try these!
SERIOUSLY, this recipe is ridiculous. I can’t even think! Saltines are only like my favorite thing ever….ever and I haven’t been able to eat them since the whole GF thing. Must find a replacement!!!!!!!

I would never have though to combine saltines with anything sweet. This is a perfect recipe for me since I’m less then stellar in the baking department. The simpler the better!
o.m.g. my grandma has made a chocolate version of this since I can remember – she always brings it at Christmas time and this past couple years I’ve been making it and just last year I realized it wasn’t her secret recipe… ha!
