Chocolate Chip Almond Meringues

Today is my birthday.

Because it is three days before Christmas, it’s really not a big deal. I’m completely okay with sharing my birthday week with baby Jesus.

It makes it a really fun celebration week. The perfect week to be snowed inside. The perfect week for shopping. The perfect week to see family and friends.

The perfect week to make cookies and eat them with reckless abandon.

It’s even more perfect that these chewy little meringue cookies take about 5 minutes to put together. It leaves plenty of room in your day for doing those Christmas-birthday activities.

Chocolate Chip Almond Meringues

  • 2 large egg whites
  • 1 t vanilla
  • 3/4 c white sugar
  • 1/8 t kosher salt
  • 1/8 t cream of tartar
  • 1 c chocolate chips
  • 1/4 cup almonds, toasted and chopped into pieces

Preheat the oven to 300 degrees and line a cookie sheet with parchment paper.

Put the egg whites in a big mixing bowl and beat until soft peaks form. Add the vanilla, sugar, salt and cream of tartar with the mixer running at low speed.

Then fold in the chocolate chips and almond pieces.

Drop by spoonful onto the cookie sheet and bake for about 25 minutes or until they start to brown on the edges.
