Oh boy.
I am so glad to be back to normal life. Yesterday I swept, mopped, vacuumed, scrubbed, put away Christmas decorations, did one million loads of laundry, and organized three billion new flashy-singing-light-up toys, stuffed animals, and adorable nine-month old clothes.
How in the heck is Baby A almost wearing nine-month-old clothes?! I’m going to scream.
The other thing I’m going to scream about is how stinking easy it is to make hash browns. (Also, I feel like screaming about how incredibly un-photogenic hash browns are)
You just need potatoes and a panini press.
Or a waffle iron.
Or a pan and another pan.
Or even just a pan or something heavy.
First you grate the potatoes with a cheese grater or a food processor.
Then put them in a colander and squeeze out all that extra liquid by pushing down on them with your hand.
Then spray your panini press (or waffle iron, or pan) with a lot of non-stick spray. The more spray, the crispier the potatoes get.
Then make a single later of potatoes, close the lid (or put a heavy pan on top of the pan they are in) and cook for 5-8 minutes. I like mine really crispy, so I probably left them in closer to 8 minutes.
That’s it! Perfect for breakfast burritos, or just eating by the handful.

That worm is awesome! And I can’t believe Adrienne is almost 9 months old…wow. Where does the time go?! Still the cutest baby I have EVER seen!
Who do you think she looks more like? You or Meeker?
Oh and the hashbrowns do look good…I just rarely make is past Baby A!
Meeker, hands down. And she is actually only 7.5 months old, but she’s a tall girl (long?) so she wears nine month old clothes. But still…she’s getting too big!!
Panini potatoes, excellent idea!!
Such a great idea! I’ve never made hash browns before. For some reason, they sound a lot harder than they are.
Oh my gosh, I saw this idea on Pinterest and wondered if it worked! Looks like it works really well!
Dude, I have never even thought of this! I’m on it. ON IT.
9 month old clothes!??! YOU NEED TO GET THAT BRICK WE TALKED ABOUT!! She’s not allowed to grow up so quickly!!!
I love hash browns and have never thought to make them in a panini press – that’s genius!
Oh my gosh, that picture. How does she keep getting cuter??
What a good idea! I need to bust out my press.
Love that worm so much! So stinkin’ cute!
I’m a potato lover, like big time. I absolutely love love love this recipe and can’t wait to try it out!! Bookmarked
Omg. When I first saw that photo of the hashbrowns I had no idea what is was and thought you’d lost your mind.. but obviously you’re a genius and I need to make these. I’m sure they’d accompany my pancakes reeeeally well.
COOL!!!!!!! thanks for sharing this. I loooove hashbrowns.
I love hash browns, so I think this is pretty much the best idea ever. Definitely “borrowing” some potatoes from my parents house today so I can make them tomorrow for breakfast.
Love the giant “Wormie” and now I want one! She is going to love this for a really long time. Happy New Year, Katie!
What a fabulous idea! I love hashbrowns, but get annoyed with how long it takes to cook! PS. Baby A is absolutely adordable.
shredded hashbrowns are the best!! I actually bought potatoes the other day to make some. I love your idea of using the panini press!
Look at that catepillar!! I love it! Christmas present?
Hash browns in a panini press? This is genius! I think I need to get me one of those!!
This is an awesome idea! I love my hashbrowns extra cruelty too.
I was still putting Will in 6 month clothes, but when his pants started to look like capris a couple of weeks ago, I decided that he was probably too big for them. I get sad when I have to put away clothes because they don’t fit.
Want those hash browns now! Love that Baby A. I did the same thing yesterday. Is it sad that it made me feel good?
I LOVE the worm adrienne is sitting in. where did you get it?
I’m going to try this with my foreman grill. I’m trying to eat more vegetarian dishes so it’s been collecting dust…
Perfect!
