Panini Press Hash Browns

Oh boy.

I am so glad to be back to normal life. Yesterday I swept, mopped, vacuumed, scrubbed, put away Christmas decorations, did one million loads of laundry, and organized three billion new flashy-singing-light-up toys, stuffed animals, and adorable nine-month old clothes.

How in the heck is Baby A almost wearing nine-month-old clothes?! I’m going to scream.

The other thing I’m going to scream about is how stinking easy it is to make hash browns. (Also, I feel like screaming about how incredibly un-photogenic hash browns are)

You just need potatoes and a panini press.

Or a waffle iron.

Or a pan and another pan.

Or even just a pan or something heavy.

First you grate the potatoes with a cheese grater or a food processor.

Then put them in a colander and squeeze out all that extra liquid by pushing down on them with your hand.

Then spray your panini press (or waffle iron, or pan) with a lot of non-stick spray. The more spray, the crispier the potatoes get.

Then make a single later of potatoes, close the lid (or put a heavy pan on top of the pan they are in) and cook for 5-8 minutes. I like mine really crispy, so I probably left them in closer to 8 minutes.

That’s it! Perfect for breakfast burritos, or just eating by the handful. IMG_8244

    I love hash browns and have never thought to make them in a panini press – that’s genius!

  3. This is an awesome idea! I love my hashbrowns extra cruelty too.

    I was still putting Will in 6 month clothes, but when his pants started to look like capris a couple of weeks ago, I decided that he was probably too big for them. I get sad when I have to put away clothes because they don’t fit.
