Remember when it was warm and perfect and sunny this summer? And I had a salad every day of my life for something like 4 months?
Well, summer and salad obsessions are on vacation.
I’ve been eating roasted vegetables so much that I’m actually surprised that I haven’t turned into a giant green bean or something.
My latest favorite lunch is a bunch of roasted carrots, cauliflower, onion, sweet potato, butternut squash, green beans, and short brown rice. I made about 25 servings of it last week (I’m exaggerating) and I’ve yet to get tired of it.
We have also had a rotisserie chicken in the fridge for a week, so I keep throwing little bits of that on there, too. If I don’t have to touch raw chicken, I’m totally okay with it.
Everyone in this house (really just baby, dog, and mama) think it’s a perfect lunch.

It IS a good thing veggies are so versatile, isn’t it?!
My body is very obviously confused because all summer I ate hot oatmeal for breakfast and now all I want it a cold smoothie. I don’t get it either.

My boyfriend forces himself to eat a salad with beans/tuna/chicken every day for lunch because ‘it’s good for him’ he hates them so much he calls them crapsalads. I try to explain to him it iiis possible to eat healthy food that is delicious… you just have to figure out what works for you! You’ve done a great job!
I’m so so so with you on the raw chicken. I am fine handling raw red meat, but when it comes to chicken it totally grosses me out. Rotisserie chicken is A-okay
I use it in chicken soups because it is already so tender and makes the making of chicken soup fast and easy.

Me too…I always think they will last me all week, and are usually gone by Tuesday.
I actually was JUST having a conversation the other day about how much I love roasted vegetables (said conversation was being had while I roasted brussel sprouts in the oven). I really think that if I needed to, I could live on them + hummus. They’re just the perfect thing for the winter. So you can add me to the list of people that agree with that being the perfect lunch

Yes you do – it’s AWESOME. Especially when you add pecans at the very end of roasting the brussel sprouts!

Ugh, raw chicken is the worst. I’m totally on board with this lunch bowl though.. I do the SAME thing. Only I usually have a whole sweetie potato in there.. I should be orange.
I have to share my sweetie potatoes these days…maybe I should just make 2?

Total winning style lunch right there!!! Roasted vegetables are so good! Anytime someone tells me they don’t like a particular vegetable, i tell them to roast it, it will change their mind!
I just picked a recipe for dinner because I knew Mr. T would be around to handle the raw chicken. I don’t mind handling it if I don’t have to eat it, but if I’ll be eating it I have to skip the raw portion. It’s too much.
Agreed…it’s just so slimy and gross. It’s good to have men around sometimes.
We made a roasted chicken this past Friday and we are STILL eating it; it’s amazing how much cheaper it is than buying chicken breasts, and I love how easy it is to throw into any type of salad as the perfect compliment.
I really need to copy you on the whole roasted vegetable thing. I love roasted begetables, but never have tiem these days. maybe I should prep in advnace. That’s what you do, yes? I’m jealous of your lunches (and your quiet, clean house- it appears that way anyway).
Yes, I’m all about the prep. I even put it on my calendar…it’s very nerdy. And it’s not always quiet and clean at my house.
But I think having two boy toddlers is probably a little messier than one 7 month old little girly girl.

I love roasted vegetables. Whole Foods has this wonderful mixture of butternut squash, spinach, and cranberries right now that I absolutely LOVE!

i just caught up on an embarrassingly large amount of posts, but i just have to say your blog keeps getting better and better. little pics of adrienne…yummy recipes…workouts…funny anecdotes…daily eats…it's such a lovely amalgamation of happy things that make me smile! and i really want one of your nonna's brisket sandwiches (told you i was far behind…).
anyways, i refuse to let that many posts go again because i am really interested in the crossfit. while marathon training, i definitely want to keep toning and i think this may be a good workout to add 1-2 times per week. do you think that would still help even if i just did it that month? also, i think i have to go on the site for more info, because i have NO IDEA about strength exercises. it's embarrassing.

ever since i learned how to roast a chicken this summer, i’ve been doing it every few wks, but raw chicken is still the grossest, nastiest thing EVER to me (next to feet)!! i thought it would get easier each time, but no go! this would be such an easy choice if i hated eating roast chicken…
