You guys know I can’t leave a waffle or pancake recipe alone, right?
I try! I really try to just follow the recipe, but inevitably, my head gets some wild idea and I have to change it up at the last second.
This morning I was bound and determined to just make plain waffles. So I googled a really simple recipe and got to work.
But as I started mixing things together my head got to thinking…
what if I add less milk and something else?
what if I took out one egg?
what if I took out the oil?
what if I used that sweet potato that’s in the fridge?
And that’s how another waffle recipe was born. Sans oil and plus sweet potato.
Sweet Potato Waffles
makes 4 waffles
- 1 cups all-purpose flour
- 2 teaspoons baking powder
- 1/8 teaspoon salt
- 3/4 cups milk
- 1/4 c sweet potato, cooked
- 1 egg
Preheat waffle iron.
In a large mixing bowl, whisk together flour, baking powder and salt. In a small bowl, combine milk, sweet potato and egg until smooth.
Combine the wet into the dry. Spray preheated waffle iron with non-stick cooking spray. Pour mix onto hot waffle iron. Cook until golden.




I SO wish I had a waffle maker. How do I not have one?! I’ll settle for pancakes for the time being.
Have you done Ebelskivers? Tasty but kind of a pain. Love the waffles! Yum.

Those look delicous!! This may seem like a silly question…but how often do you and your little family go out to eat?
Next to never! It’s so much cheaper for us to eat at home, so unless our parents take us out to eat, or we have a gift card (we got a few for Christmas!) – we just eat at home. Maybe 3x a month…
