I’m on an arugula kick. I have been putting it in every meal I’ve eaten this week. It tastes like peppery butter to me – which means it goes with everything.
I’m also on a Dr. Praeger’s veggie burger kick. They seriously taste like egg rolls.
Add a bagel slathered in horseradish and spicy mustard and you’ve got yourself one heck of a lunch.
What’s your current lunch kick?

My current lunch kicks are salmon salads. I throw a salmon filet on top of spinach and whatever roasted veggies I can find. Topped with feta and chipotle dressing.
Yum, I love junk salads like that – thanks for the good idea!
I like Dr. Praegers but I wish they didn’t fall apart so easily! My current lunch kick is an arugula salad with Trader Joe’s Goddess Dressing and nutritional yeast.
Yes arugula! I’m obsessed.
I LOVE Dr. P’s veg burgers.. they sometimes get really crumbly for me too, but I don’t mind. Lunch lately here has been a lot of deli meat courtesy of the Paleo kick I’m on. I would punch someone on the street for a bagel like you’re having, though.
Haha, that’s how I ALWAYS felt when I was doing paleo – I wanted to punch everybody all the time.
I *love* arugula! Unfortunately, I’m the only one in the family who loves (or likes!) it, so it’s not all too common around here.
Everyone agrees on that brand of veggie burgers though, which are so, so, so yummy!
Current lunch kick: salad with avocado, black beans, salsa and a fried egg on top. Delicious.
I always forget about eggs for lunch – thanks for the reminder!
What type of Dr. Praegers veggie burgers are those? They look super yummy and I want to buy them, but I’m on the website and they have 7 different kinds.
This week I have been brown bagging it…did I tell you I have been substituting?? Very fun. I was with 4 th grade all week…great age! So I have been bringing the lunch pail back!
Ahh, I had no idea!! How fun! I was a sub for about 6 months…it was a great gig. Except when I subbed high school – I hated that.
MMM horseradish YES love it!
I have been loving the chicken soup with cabbage and apples I made…I think i have a new obsession with caraway seeds! I used them on roasted veggies last night and they turned out SO GOOD!! highly recommend it
I need to make that soup…its on my list!
This lunch looks delicious and your pictures are beautiful!
I can’t eat a Dr. Prager’s without thinking of how it smells and tastes like egg rolls because of you
That plate right there is definitely a Cait’s Plate!
It was indeed a Cait’s Plate…I thought of you. Well, I think of you all the time.
WHERE do you get those Dr. Praeger’s?! they sound heavenly, and I wanna get on that train.
I got them at Sprouts…a healthy(ish) grocery store here!
LOVE Dr. Praegers! The only danger is that I eat one, and then I just want another…
Lately it’s been quite cold in Missouri so I’ve started making soups and having delicious leftovers for lunch with brown rice – anyone out there looking for an awesome stick-to-your-bones soup should check out the Curried Lentil Soup from ohsheglows.com! Curry + veggies + warmness = serious yum.
Thanks Diana!
I usually eat dryer lint and cobwebs.
OH I KEEEEED.
Mostly leftovers or little organic frozen burritos with sauteed spinach. It works!
Leftovers are my one true love.
Hey.
I’ve been on the hunt for those veggie burgers but they don’t seem to sell them around me
I’ve been on a serious greek yogurt with cereal and pb mixed in kick. It tames my sugar cravings
Recently…toasted tortilla with cheddar and apples. And since that will keep me full for about 5 minutes, whatever other snacks I can get my hands on
That reminds me that I have arugula I need to eat up ASAP!
If you don’t want it, send it to me!!
Leftovers!! Easy to pop in the microwave & inhale during naptime.
Praise the Lord for easy naptime meals, right?
Since my hubby is out of work, he packs me lunch every day! How sweet is that? I’m doing a 40 day paleo commitment, and my favorite lunch lately is sauteed kale and a chicken breast…. preferably with dijon mustard all over everything. I’m on a major dijon kick! PS, I’m glad to say I can eat paleo without wanting to punch anyone
Sounds like paleo did not work for your body, but it makes me feel fantastic!
What a nice hubby!! And yes, Meeker and I did paleo for almost a year – he thrived on it (and still eats like that), and I withered. Hah.
I’ve actually been on a turkey burger kick! Trying chickpea and spinach turkey burgers tonight!
I just tried Dr. Praeger’s fish sticks for the first time a few weeks ago. (Gluten Free) I was impressed at how good they tasted! Lovely photos and your sandwich looks delish.
That lunch looks great! I always have leftovers from the night before.
My favorite lunch recently has been a loaded salad: spinach, romaine, white beans, artichoke hearts, tuna, quinoa and roasted chickpeas (in place of my favorite accoutrement–croutons) with a mustardy vinaigrette. yum. I’ve also loved roasted vegetables–I’ve been inspired by your big bowls.
I should add arugula to my shopping list for this week. I always forget about it!
I love that you had your burger on a bagel- I think you just made every reader instantly crave one.
Have you had arugula on pizza yet? That’s a train that I don’t plan on getting off of EVER.
Oh man, I bet. I’m going to have to try it this weekend. Thanks for the idea!
Arugula is amazing…especially on pizza!!!
Yes, they do taste like egg rolls. I love those veggie burgers!
oh my GOSH that is awesome – I always say Praegers taste like egg rolls!! seriously!!
and I love them so much for that reason…
They really do, right?!
I am definitely on a soup kick. However, just a few moments ago I was talking to my mom about arugula and how I never buy it but I love it, especially on pizza. And you have to try the Morningstar chipotle black bean burgers. Life. Changing.
On it. The arugula pizza and black bean burgers.
lately my lunch kick involves a HEFTY bowl of peanut curry soup. i can’t get enough at all. and broccoli slaw. i want nothing to do with lettuce and things only to do with slaw
I think I went through a broccoli slaw kick for an entire year in 2010 – I haven’t really glanced at it since, but it IS good stuff.
This lunch looks amazing! For my lunch, I’ve been on a turkey, bagel thin and PB2 kick. And I second that, Jessica–the Morningstar black bean burgers? To die for!
Stuck on two things lately: Quorn meatless/soyless burger patty and a baked sweet potato with a tiny bit of BBQ sauce or a turkey sammy with avocado and Havarti. Oh my gosh, I’ve fallen head over heels for Havarti!!
I’ve always loved those veggie burgers, but I could never pinpoint what the flavor reminded me of. It IS egg rolls! Wow. I bet you could mush up the burger, roll it up in a won-ton wrapper, and bake it. :]
Oh, I love Dr. Praeger!
I need to read through all your comments to find some ideas… Ha, ha. Because I am the queen of eating stuff I don’t like for lunch, just because it’s easy. Lol. I need a lunch makeover!!
Hope the comments help – I know they gave me some good ideas!
I love bagel sandwiches…so good!
Lately I’ve been on a chicken and veggie salad kick!
I’m right on the same page about arugula! It’s my favorite green right now. And I eat about a pack of Dr. Praeger’s a week- the best taste/texture/ingredients list of any veggie burgers I’ve tried, and it doesn’t hurt that they’re pretty cheap at Trader Joe’s
I”m totally on a salad lunch kick! I am especially loving hummus on top of my salad!
Bagels and veggie burgers? Can I come over and eat with you sometime?
Please do!
Spicy horseradish and mustard – we would totally get along (or fight over the condinments…)
Current lunch obsession is (as always) hummus with a ton of hot sauce and tenderstem broccoli to dip in it. Adore.
Okay, both those things are going to be on my lunch plate today.
[...] spotted these and got very excited because many other bloggers rave about them, especially Katie. I have every intention of recreating that Sweet Green salad from last weekend and putting one of [...]
