Healthy(ish) Breakfast Burrito

I woke up on Saturday morning with an overwhelming need for a breakfast burrito. Need.

Considering that my desire for things that aren’t cake are usually fleeting, I jumped all on it.

Meeker was at work and due home in less than thirty minutes. I (really badly) wanted to surprise him with the smell of eggs and bacon cooking when he walked in, so Baby A and I hustled ourselves to the store for ingredients.

When Meeker walked in I was jumping around like a monkey, hollering I have a surprise for you!

He said it smelled like a delicious surprise and it was.

Little did he know it was a slightly  healthy surprise, too. Only slightly, mind you.

(Meeker, that wasn’t real chorizo in there…surprise!)

Healthy(ish) Breakfast Burritos

PRINT Recipe

Makes 4

  • 4 high fiber tortillas
  • green bell pepper, sliced
  • half an onion, sliced
  • 6 ounces Soyrizo
  • 3 eggs
  • 4 slices of bacon
  • 1 c hash browns
  • 1/4 c plain greek yogurt
  • 1/2 c shredded cheddar cheese
  • 4 T salsa
  • cilantro (optional)

Cook the bacon, drain the fat, and set it aside. In the same pan, sauté the onions and peppers.

Meanwhile, cook Soyrizo and the eggs in a skillet over medium heat. About 5 minutes.

Divide all the ingredients between 4 tortillas, garnishing with cilantro (unless you are one of those odd people that thinks cilantro tastes like soap…in that case, just skip it)

  1. Hahah – I wish I could’ve seen Meeker’s face when he read that it wasn’t real chorizo in there.

    I do that type of stuff all the time to my family and friends when making them stuff that I want to be sneaky healthy. It’s the best when they’re like “this is so good!” and then you get to reveal it’s healthy.

    • Aww, shucks. Thank you – it’s always a work in progress, but I have fun learning. And no, the Soyrizo isn’t from TJ’s…sadly we don’t have one in Colorado. Sigh.

  3. Haa! I find it impossible to avoid going way overboard on the self congratulatory front, whenever I cook Louis anything that isnt salad.

    As soon as he gets home from work, I’m like ‘Look I rushed home early and GUESS WHAT WE”RE HAVING FOR DINNER?? – I’ve bought us scallops and currently I’m cooking bacon and scallops for us, just like in restaurants. DID YOU HEAR THAT LOUIS I’m making bacon and scallops and maybe even those peas… and we arent eating salad – we are going to have bacon and scallops and….’

    And eventually Louis says ‘you are the best wife ever – youre so amazing’ about 5 million times and then eventually I shut up we eat. So your excitedness about cooking the burritos was small fry lady :) – they look freaking delicious though…!!

  4. Breakfast burritos are staples of our weekend eating. We usually get a little lazy and head to the taco cart down the street. It’s hard to beat a fresh, made to order, breakfast burrito for $3.50! But it’s true, there is nothing more fun than breakfast wrapped in a tortilla! Soyrizo is pretty awesome!

  5. I love breakfast tacos but rarely ever eat them. I think I always forget about them…thanks for the needed reminder! I think if I tried to sneak fake sausage into Keith’s breakfast he would pick up on it immediately.

    • I thought Meeker would catch it for sure…he even knows when I less butter in recipes. But this Soyrizo is dang good stuff.

  6. Looks really delicious! I will try this for breakfast this week. I will stick with a Mexican Chorizo though, because of hypersensitivity issues. But the variation is really awesome. Love the mix of colors in the pictures, really eyecatching!

  8. do people really think cilantro tastes like soap? how odd.

    a few weekends ago kyle made pizza (ok he thawed a frozen pizza) for his guy friends that were over to watch football. he added vegan sausage on top and didnt tell them. they still dont know. hehe.
