We have two staple foods in our house at all times.
Green olives (usually the kind stuffed with garlic) and almonds.
If we are out of either, a trip to the grocery store will be made within the hour.
While I was picking up said green olives, I remembered that I had to make an appetizer for a little Valentine’s Day party we were headed to the next day.
Then I saw those cute little bocconcini (bitsy marinated mozzarella balls) and knew what I had to do.
I had seen something similar on Pinterest, but when I clicked on the actual link…it was written in Romanian. So I have no idea what the recipe was.
Okay, I have some idea because there were pictures involved. I’m good at reading pictures. But here is my take on it…written in English juuuust for you.

That is such a cute little appetizer! And I’m SUCH a fan of marinated olives. Whole Foods has this kind with lemons and garlic and fresh cracked pepper. They’re heavenly.
Mmm those sound perfect…I could eat green olives for the rest of my life!
I’m not a huge fan of olives, but there is a brand called, “Lindsay” olives that I can’t help but be drawn to (not to eat, just to read the can). Spelled the right way and everything.
Hah, I’ll get you a can to stare at while you’re here in CO…make you feel right at home.
My (big Italian) family alwaaaaaaays has those yummy ingredients as a part of our appetizers on holidays or special dinner parties.
I LOVE olives, black ones are my absolute fave! Im a big fan of baking flax crackers for parties, theyre always a winner!

I do something similar to this in the summer. I do caprese skewers which is a grape/cherry tomato, bocconcini, and basil. Then I drizzle the platter with a slightly reduced balsamic before serving. It is a huge hit everytime but so easy. Which is exactly my kind of appetizer.
I was debating between the basil/tomato combo and this one! Truth be told…I like your version better.
I’ve had appetizers like this a bunch of times but never with that little sprig of parsley in between. Love that idea! It kind of helps offset the big hunk of meat

For Thanksgiving, my aunt stuffed dates with cream cheese. Super easy, and so delicious. I’ve stolen that idea from her a few times now.
Grilled pears with Parmegiano Reggiano, Grana Padano or very aged Gouda wedge drizzled with honey and black pepper. YUM!
