I have a full-blown obsession going on with fingerling potatoes.

How fun is that word?!

Fingerling.

I’ve been eating them by the bag-full lately. They only take about 20 minutes to steam – which makes them perfect for lunches.

Just sauté yourself some mustard greens (you can completely taste the mustard flavor…so delicious), sprinkle on a little nutritional yeast, slap some butter on top (then watch it slide down those gorgeous fingerlings) grab yourself a magazine,  and enjoy!

  1. I’m still lacking when it comes to creative lunches! Ha, ha. But I have hope that someday, I’ll be good at putting together lunches that have variety… and flavor. LOL! Those potatoes look delish!

  3. Do I just love you or what?! I went through a fingerling potato obsession stage myself and this just reminds me that it’s about time to bring it back! My lunches lately have been so boring it’s actually painful. I need to do something about it asap.

I’m also having a potato “problem” lately (February always seems to be a “comfort foods” month for me), and one of my favorite things to do is make potato nachos…which is just what it sounds like. Roast up a mix of fingerlings/yukon golds/baby red potatoes, dump ‘em on top of a bed of your favorite greens, and then cover with seasoned black beans (preferably mixed with a bit of corn), salsa, chopped tomato, avocado, black olives, jalapenos, plain yogurt, hot sauce, etc…it’s so much more satisfying to me than the usual tortilla chips.

    Now I wish I had nachos for breakfast.

  5. Are fingerling also called banana potatoes? Cause I sell banana potatoes, they look just like that and they are freaking delicious. And I love me some mustard greens, I can’t believe how strong the flavour is – awsome!!

  6. We’ve been eating a lot of fingerling potatoes lately too. Ours are much thinner and smaller though that your photograph. I roast them with garlic, olive oil, and sea salt. The other night we had them with grilled salmon and spinach salad with goat cheese dressing.

    Love how you have yours on top of greens. Yum! :)

  7. If mustard greens really taste like mustard, I am about to start eating them by the bucket-full! I usually smother my kale (and, ummm, everything else) in dijon mustard.

  8. I have never met a potato I didn’t like. Lately my lunch is an english muffin toasted, each side slathered with homemade hummus, then topped with roasted peppers and onions. I seriously cannot get enough. I am planning this year’s garden and have to keep reminding myself to not go too overboard and end up with too many peppers. But is there really such a thing?

  9. Katie! You are totally going to be excessively beautiful and youthful right into old age eating so many veggies. That is such a ‘my mom lunch’ and she is now 72 and looks about 50 AND teaches yoga – this is her!
