I wanted to call this salad Taco Salad Extraordinaire because that’s exactly what it is.
It’s also an extraordinary lifesaver of a dinner….
…if, hypothetically, your baby is simultaneously getting two new teeth, learning how to stand up in her crib thus not napping AT ALL during the day and sleeping very little at night, and there is a combination wind storm/snow storm outside so you can’t do anything at all except for try to get your baby to sleep and piddle around the house organizing and re-organizing closets and drawers OH and you also have to feed your husband before your four girlfriends come over and invade your kitchen to make twenty-five meals in three hours.
This dinner will save you. Because guess what?
It uses your crock pot! The miracle tool for mama’s of teething-non-napping-babies and wives of hungry-cave-man-husbands.
All you need to do is put a few chicken breasts in your crock pot (they can even be frozen) and pour a can of enchilada sauce over the top. Then crank that sucker up to high and let it cook until the chicken is done –a couple of hours.
Then take two forks, shred your enchiladafied chicken, and put it back in the crock pot on low for….all day if you want.
Then pile it on top of some lettuce, add some more Mexican things, and…
dinner is served.
Taco Salad Extraordinaire.
Yum! I actually did the crockpot enchilada chicken last week but used it in soft tacos. I think you may have given me a lunch idea for next week!
In. In. INININ.
yes, please.
You know, that is a fantastic idea. Thank you!!!
This looks DELICIOUS. I really need to visit and let you feed me. I MAY be in Colorado Springs in March.. is that super far from you?
Really?! NOOO, not far at all! My parents live there, too! Yipeeeee! Email me the details, we have to meet.
Oh I just love you. You are WOMAN extraordinaire. And this looks delicious and REALLY makes me want Mexican now.
Have so much fun tonight! I wish I could be coming!!
Thank you! We actually did the twenty-five-meal explosion last night and it was so much fun! I’ll probably post about the details at some point…we plan to do it once a month! Wish you could be here for it, too!
Please post about this 25 meal explosion, as I had a friend suggest this recently and was very intrigued:)
I will! I didn’t take pictures this time, but we plan on doing it once a month, so I will fully document it next time!
I am definitely trying the chicken and enchilada sauce in the crock pot thang! I make my own enchilada sauce (…because I don’t have a teething baby) and it’s super yummy.
You are super human extraordinaire. Will you send me your recipe?!
This is one of my favorite meals ever. And the crockpot is one of my favorite kitchen gadgets ever
I love salad bowls- and noodle bowls.. Pretty much anything that I can throw on top of some greens makes me happy!
I make this all the time and it’s so good, and easy!! I make my own green sauce for the chicken and it’s so good that way too!
it all sounds too familiar:) love it!
We eat this often at our house – love it!
Our little gal sounds like yours, although she has been sleeping well. My hubby is the tough guy and lets her cry (which I have to admit does work, as she’ll fall asleep after about 20 minutes). But of course being the mom, I just want to rush right in there!
We are pretty strict about letting her cry it out, too…2 hours yesterday and then I caved. Blehh, I hate it, though. Tell your little girl to tell my little girl to get on the sleeping bandwagon.
that’s exactly what my lunch looks like 90% of the time.
We were destined to be food-loving besties from the start.
Pancakes and salads. That’s all you need in life, right? Oh…and love.
I’m so shamefully late to the chicken in a crockpot party. But I am possibly its most excited guest. I need to try this version!!
So easy and so delish…I really need to get a crockpot!
This recipe looks amazing! I’ve got a teething baby too right now! This recipe will be a life saver!
Thanks!
Salad bowls are the best, a lot of delicious things going in there!
Yum! And your meal making with friends sounds fun! Hope you took pictures…?
Very fun!! All gluten-free meals, too…you’d be proud. I will be sure to document it next month when we do it again!
Wow. Your days sound like mine right now. And…by the way… I found it comforting that I’m not the only one who has a chalkboard with our weekly menu on it. And.. By the way… My son (8.5 months) thinks your daughter is pretty darn cute. I have the slobber smears on my iPad to prove it.
thanks for yet another dinner idea…. Now off to find that cake-in-a-mug recipe of yours… Momma has a craving .
Haha! I love that…baby crushes. Yay for the chalkboard menus, too!
poor baby AND mama! I hope that cutie patooty of yours is feeling better with those nasty teeth coming in!
Thank you! She is being reallllly sweet as I type this. Especially for not sleeping…full of giggles and smiles. So maybe the worst over!
that looks so good and so pretty! sooo adriennes pics in the last post…made my heart melt…for real
My mouth is watering!!!!!!
I have a can of that sauce in my garage. Don’t ask.
Hah! Put it on some ground tempeh and call it a day.
Oh……. Just my style.
this is also perfect for mamas of crazy two year old twins that climb the walls all day, every day.
hope the teething and sleeping gets better.
I don’t even know how you have time for anything during the day!!
Crockpots are so gratifying…you hardly have to do any work, and they usually always produce a lovely result. I love coming home from work with the house already smelling good from a crcokpot meal.
I made whole wheat pasta to take to work today…then opened a can off spicy Rotel to sauce it…creative
i know!
That is so something that I would love to make! I love meals with little bits of this and that. Yum!
Isn’t the crockpot the best invention ever??!! Might have to make this little salad for Mexican Monday!
So simple! So colorful! How did you write the words on the picture? I really like that!

I will definitely be doing this! I was just craving chicken tacos the other day, and this is the perfect way to get them done when I’m feeling lazy (which is, let’s face it, every day). Thanks for the great idea!
Oh my goodness this looks delcious!
