Shredded Chicken Taco Salad

I wanted to call this salad Taco Salad Extraordinaire because that’s exactly what it is.

It’s also an extraordinary lifesaver of a dinner….

…if, hypothetically, your baby is simultaneously getting two new teeth, learning how to stand up in her crib thus not napping AT ALL during the day and sleeping very little at night, and there is a combination wind storm/snow storm outside so you can’t do anything at all except for try to get your baby to sleep and piddle around the house organizing and re-organizing closets and drawers OH and you also have to feed your husband before your four girlfriends come over and invade your kitchen to make twenty-five meals in three hours.

This dinner will save you. Because guess what?

It uses your crock pot! The miracle tool for mama’s of teething-non-napping-babies and wives of hungry-cave-man-husbands.

All you need to do is put a few chicken breasts in your crock pot (they can even be frozen) and pour a can of enchilada sauce over the top. Then crank that sucker up to high and let it cook until the chicken is done –a couple of hours.

Then take two forks, shred your enchiladafied chicken, and put it back in the crock pot on low for….all day if you want.

Then pile it on top of some lettuce, add some more Mexican things, and…

dinner is served.

  1. I am definitely trying the chicken and enchilada sauce in the crock pot thang! I make my own enchilada sauce (…because I don’t have a teething baby) and it’s super yummy.

  2. We eat this often at our house – love it!

    Our little gal sounds like yours, although she has been sleeping well. My hubby is the tough guy and lets her cry (which I have to admit does work, as she’ll fall asleep after about 20 minutes). But of course being the mom, I just want to rush right in there!

    • We are pretty strict about letting her cry it out, too…2 hours yesterday and then I caved. Blehh, I hate it, though. Tell your little girl to tell my little girl to get on the sleeping bandwagon.

  3. Wow. Your days sound like mine right now. And…by the way… I found it comforting that I’m not the only one who has a chalkboard with our weekly menu on it. And.. By the way… My son (8.5 months) thinks your daughter is pretty darn cute. I have the slobber smears on my iPad to prove it. :) thanks for yet another dinner idea…. Now off to find that cake-in-a-mug recipe of yours… Momma has a craving .

    • Thank you! She is being reallllly sweet as I type this. Especially for not sleeping…full of giggles and smiles. So maybe the worst over!

  4. Crockpots are so gratifying…you hardly have to do any work, and they usually always produce a lovely result. I love coming home from work with the house already smelling good from a crcokpot meal.
