Whole Wheat Coconut Sponge Cake

You know when you wake up in the middle of the night and you’re so out of it and groggy sleepy face that you can’t remember what day it is?

In those wee hours, it always feels essential for me to stay awake pondering the day of the week before I let myself go back to sleep.

It’s not like it matters in the slightest. I don’t have a job to go to. Meeker dutifully goes to work seven days a week. Adrienne hangs out with me seven days a week and we pretty much follow the same routine. Punky and Bagheera just lay around the house no matter the hour/week/month/day/year.

So, the day of the week matters zero in this household. (That’s probably why it’s so hard to keep track of at 3am)

But for whatever reason, when I awake and realize it’s Friday I get a little extra boost. Maybe it’s years of yearning, whishing, hoping, working for the weekend – engrained in me.

Which is precisely why I decided (at 3am) that this Friday needed a cake to set it apart. From say…a Monday when I made pizza.

Whole Wheat Coconut Sponge Cake

PRINT Recipe

  • 2 eggs
  • 1 C sugar
  • 1 t vanilla
  • 1 C whole wheat pastry flour
  • 1 t baking powder
  • ¼ t salt
  • ½ C coconut milk
  • 1 t margarine or butter
Combine the ingredients and spread on the top of the still warm cake. Broil for 3-4 minutes until the butter melts into the cake.

Preheat oven to 325 degrees. In a mixing bowl, beat the eggs, then add the sugar and vanilla.

In a separate bowl, combine the flour, baking powder and salt. By hand fold dry ingredients into the egg mixture.

In a small saucepan, bring the milk and teaspoon of margarine to a boil. Add to batter, stirring gently. Pour into a well greased and floured cake pan.

Bake 30- 35 minutes.

Topping:
  • 1/2 C powdered sugar
  • 1/4 C butter, softened
  • 1 C unsweetened coconut
Combine the ingredients and spread on the top of the still warm cake. Broil for 3-4 minutes until the butter melts into the cake.

  3. “That looks spongey” usually would be an insult, but that cake looks spongey in the best possible way! I like cake that sort of squishes, if that makes sense. That coconut milk topping is genius.

  4. Yum! And I LOVE the More With Less cookbook. There is another one published by the same organization called Simply in Season that I think you would love. It’s based around seasonal ingredients and there’s a section for each season. There is a good mix of vegetarian and meaty recipes.
