Remember these candies that I was having a love affair with? It’s still going strong.
Then Ashley went and made COOKIES with the same ingredients and my head started spinning. Peanut-butter-ginger recipes were crashing around in my mind and I couldn’t stop.
I even texted Ashley while I was eating lunch one day and told her that I needed to write a peanut-butter-ginger cookbook.
But then I made this recipe and all my grand plans subsided. It’s so good – you don’t need anything else in life.
Okay, that’s not true. But it is dang good. On kale, on sweet potatoes, on spinach, as a salad dressing…heck, you could even pour it on your cheerios.
It will have you reaching into your pocket-bibb for seconds and thirds of whatever you decide to bathe in it.
Peanut Butter Ginger Sauce
PRINT Recipe
- juice of one smallish lemon
- 1 inch freshly grated ginger
- 2 T creamy peanut butter
- 1 t sugar
Combine all ingredients with a blender or with a whisk and pour it all over your life. You’re welcome.

Sounds like this would be delicious on almost anything, but I never would have thought to put it on a sweet potato. I’m think soba noodles…

My stepmother was just telling me about this movie she saw on her plane ride (“It’s Time) where people wear their “time-left” in life on their sleeves and it sparked this little philosophical discussion at the breakfast table…when I saw the photo of baby A I just thought “Let’s stop time cuz this baby A is a keeper” although I think she’s only going to grow to be cuter and sweet and awesomer – of – a – little person!
Peanut and ginger is seriously a match made in heaven. So good together!!
