Have I told you guys that Meeker is on this low-carb thing? He has been for months, and it’s going really well – he said he feels better than he ever has and he’s lost like 20 pounds. But to be fair, weight falls off of his frame if he so much glances at a stick of celery. (Remember vegetarian month??)
I have not been on a low-carb thing and it’s also going really well. I haven’t lost a single pound but maaaan is my soul happy.
Another reason his low-carb lifestyle is going so well is that he get’s to eat steak and cheese to his heart’s content.
Oh, and tuna. With cheese melted on top. Inside of a little lettuce boat.
I know, I know. Don’t worry about the broiling the lettuce thing. It seems kind of weird and wilty, but Meeker said it worked. And since he ate every single one of those little tuna fishy boats, I believe him.
Tuna Melt Boats
makes 5
PRINT Recipe
- 10 oz canned white albacore tuna
- 2 T mayonnaise
- 1 T spicy mustard
- 2 sticks celery, chopped finely
- 1 small pickle, chopped finely
- 1 T pickle juice
- salt and pepper
- 5 romaine lettuce leaves
- 1/2 C cheddar cheese
Combine everything but the romaine lettuce and cheddar cheese. Then divide the tuna equally between the five lettuce leaves and broil for a couple of minutes until the cheese is melted.


These look amazing – I’m always looking for ways to change up the typical tuna melt!

I eat mostly paleo. When I do have a treat, I try to make it grain-free (usually). I love carbs SO much but, sadly, they don’t love me back.
Yummy! Being gluten-free, I eat a lot of things wrapped in lettuce that would otherwise need bread slices or a bun. Your tuna boats looks delicious, might just have to have those for lunch today.
We just started eating Paleo style in our house this month and made “tacos” last night using the same idea of lettuce leaf shells. They tasted great and I didn’t even miss the shells. I’ll have to give this recipe a try now too – never even thought of broiling the lettuce bowls to melt the cheese. Any other fun recipes that Meeker has been eating with the low-carb plan? Always looking for suggestions
I love that he dug into them straight from the pan. Who wants another dish to wash? haha
We pretty much have vegetables and meat every.single.night. I of course add a hunk of bread and/or dessert afterwards, but Meeker just sticks with the veggies + meat combo. (We did paleo for almost a year together and I was never so miserable and grumpy)
I love how I feel on paleo… but I don’t think there is any diet that works for everyone. I can’t believe you made it a year feeling miserable! If I didn’t feel FANTASTIC there’s no way I could stop myself from eating all the yummy non-paleo food.
Yeah, I just kept thinking my body would “adjust” and get it…no so. But at least I know that my body loves carbs, now! Hallelujah.
Really this is for us to nip a bit of a sugar addiction we’ve had going on in our house the past few months. We usually eat pretty healthy, but somewhere along the way the past few months we both picked up some bad habits. We started reading “Primal Blueprint” together every night and have found it pretty interesting, so I figured we’d give it a go. I think what I will crave the most is homemade pizza (your 18 hour pizza dough!), the occasional bowl of cereal and my mama’s home baking.

I love this! I was craving something cheesy/melty yesterday for lunch and made myself a tuna melt on sourdough with extra sharp cheddar – and I was so happy while I was eating it. But afterward…oh noes. I don’t know if it was bread overload or what – but I couldn’t even eat dinner last night. This looks like a nice happy medium! Unless it was the tuna or the cheese that made me feel funky…but there’s only one way to find out, I guess! And I love the no plate thing – that’s me when I’m alone. I just ate cake out of the pan – didn’t turn it out of the pan or anything – just used a spoon. Can’t believe I just admitted that.

My husband has been doing the low-carb thing for a while now too, and the pounds are melting off (while I’m packin’ ‘em on!) He’d love these!! And I love grilled romaine!
If I did low carb I would probably gain 5 pounds and be mean! ha! Meeker is just like Keith…the boy weighs himself at night and in the morning and he loses between 8 and 10 pounds just sleeping. I hate him.
To be fair he hates it too….he is constantly trying to gain weight to no avail. Did I mention that I hate him?
